  • 5 Tbsp. Grated Parmesan cheese, divided
  • 3 Tbsp. Fine dry breadcrumbs
  • 1 Tbsp. Margarine, melted
  • 2 tsp Margarine
  • 1/2 c. Chopped onion
  • 1 1/2 Tbsp. All-purpose flour
  • 2/3 c. Skim lowfat milk
  • 1/4 tsp Salt
  • 1/8 tsp White pepper
  • 1/8 tsp Grnd nutmeg
  • 10 ounce Frzn minced spinach, thawed and liquid removed
  • 1 x Egg yolk
  • 3 x Egg whites
  • 1/8 tsp Cream of tartar
  •     Parmesan Crepes (see recipe)
  •     Vegetable cooking spray

Инструкции

  1. Combine 3 Tbsp. Parmesan cheese, breadcrumbs, and 1 Tbsp. margarine; stir well, and set aside.
  2. Heat 2 tsp. margarine in a small saucepan over medium heat. Add in chopped onion, and saute/fry 2 min or possibly till tender. Add in flour, and cook 1 minute, stirring constantly with a wire whisk. Gradually add in skim lowfat milk, stirring constantly. Cook 1 minute or possibly till thickened, stirring constantly. Stir in remaining 2 Tbsp. Parmesan cheese, salt, white pepper, and nutmeg.
  3. Position knife blade in food processor bowl; add in sauce and spinach, and process till smooth. Add in egg yolk; process till smooth.
  4. Beat egg whites (at room temperature) and cream of tartar at high speed of an electric mixer till stiff peaks form. Gently stir one-fourth of egg white mix into spinach mix. Gently fold remaining egg white mix into spinach mix.
  5. Spoon 1/4 c. spinach mix over half of each crepe, spreading to edge; fold crepe in half, and then in quarters. Arrange filled crepes in each of 2 baking dishes coated with cooking spray. Spoon breadcrumb mix proportionately over crepes.
  6. Bake, uncovered, at 375 degrees for 20 min.
  7. Yield: 6 servings (servingsize: 2 filled crepes).
  8. Serving Ideas : Serve with sliced tomatoes.
