- Combine 3 Tbsp. Parmesan cheese, breadcrumbs, and 1 Tbsp. margarine; stir well, and set aside.
- Heat 2 tsp. margarine in a small saucepan over medium heat. Add in chopped onion, and saute/fry 2 min or possibly till tender. Add in flour, and cook 1 minute, stirring constantly with a wire whisk. Gradually add in skim lowfat milk, stirring constantly. Cook 1 minute or possibly till thickened, stirring constantly. Stir in remaining 2 Tbsp. Parmesan cheese, salt, white pepper, and nutmeg.
- Position knife blade in food processor bowl; add in sauce and spinach, and process till smooth. Add in egg yolk; process till smooth.
- Beat egg whites (at room temperature) and cream of tartar at high speed of an electric mixer till stiff peaks form. Gently stir one-fourth of egg white mix into spinach mix. Gently fold remaining egg white mix into spinach mix.
- Spoon 1/4 c. spinach mix over half of each crepe, spreading to edge; fold crepe in half, and then in quarters. Arrange filled crepes in each of 2 baking dishes coated with cooking spray. Spoon breadcrumb mix proportionately over crepes.
- Bake, uncovered, at 375 degrees for 20 min.
- Yield: 6 servings (servingsize: 2 filled crepes).
