Sofrito or refogado is a sauce used as a base in Spanish, Portuguese, and Latin American cooking.

1 green pepper, seeds removed 1 red pepper, seeds removed 1 Roma tomato 1 medium while onion, peeled 12 cloves garlic, peeled 1 bunch cilantro leaves ½ bunch parsley leaves

Combine all the ingredients into a high-powered blender such as a Ninja or a Vitamix. Blend completely. If using immediately, fry in olive oil. Use this as a base in chicken, shrimp, or tofu recipes. 0 PP per serving
