- Combine water and the meringue powder in a large bowl.
- Whip on high speed until stiff peaks form.
- Add in 4 c. of the confectioners' sugar 1 c. at a time. Mix on low speed.
- Alternately add in shortening and remaining confectioners' sugar.
- Add in salt and flavorings. Beat on low speed till smooth.
- May be stored well covered in refrigerator for several weeks.
- Bring to room temperature before using.
- Makes 8 c..
- Recipe may be cut in 1/2 or doubled.
