%20for%20a%20couple%20days'%20worth%20of%20supplies.%20We%20were%20ready.%3C/p%3E%3Cp%3EThese%20cold,%20dark,%20snowy%20days%20are%20the%20the%20ideal%20time%20for%20classic%20comfort%20foods%20-%20roasts,%20braises,%20stews,%20carbs.%20How%20about%20all%20of%20the%20above?%20In%20the%20last%20couple%20of%20weeks%20we've%20made%20two%20whole%20chickens,%20one%20braised,%20one%20roasted,%20and%20put%20the%20leftovers%20in%20the%20freezer.%20We%20had%20onions,%20carrots,%20celery,%20stock,%20all%20the%20makings%20for%20a%20soup%20or%20a%20stew,%20or%20a%20pot%20pie,%20or...something%20different?%20Then%20we%20thought%20about%20chicken%20'n%20dumplings.%20Is%20it%20weird%20that%20Amy's%20never%20had%20chicken%20'n%20dumplings?%20It%20seems%20like%20the%20kind%20of%20comfort%20food%20classic%20that%20one%20should%20have%20tried%20before%20their%2040s.%20So%20that%20answered%20that%20-%20we're%20making%20chicken%20'n%20dumplings!%3C/p%3E%3Cp%3EChicken%20pot%20pie%20is%20our%20normal%20go-to%20when%20we%20have%20leftover%20chicken,%20so%20we%20started%20by%20making%20a%20version%20of%20our%20pot%20pie%20recipe%20as%20a%20base.%20We%20made%20it%20thinner%20than%20pot%20pie%20(less%20flour,%20no%20milk),%20but%20thicker%20than%20a%20soup,%20so%20we%20guess,%20more%20like%20a%20chicken%20stew.%20Then%20we%20grabbed%20some%20biscuit%20mix%20and%20milk%20and%20made%20a%20soft%20dough%20which%20we%20dropped%20onto%20the%20top%20of%20the%20stew%20and%20cooked.%20The%20biscuits%20puffed%20up%20like%20marshmallows%20and%20floated%20on%20top%20of%20the%20stew.%20A%20couple%20of%20minutes%20under%20the%20broiler%20made%20them%20nice%20and%20brown.%3C/p%3E%3Cp%3EWe%20got%20about%2020%20inches%20of%20snow%20and%20we%20enjoyed%20making%20this%20recipe%20-%20hot,%20delicious,%20and%20cozy%20-%20perfect%20for%20a%20snow%20day.%20Or%20two.%20Tee%20hee!%3C/p%3E%3Cp%3ESnow%20Day%20Chicken%20'n%20Dumplings%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMelt%20butter%20in%20a%20large%20saucepan.%20Add%20flour%20and%20cook,%20stirring,%20until%20golden.%20Add%20onion%20and%20celery,%20season%20with%20salt%20and%20pepper,%20and%20continue%20to%20cook,%20stirring%20often,%20until%20vegetables%20are%20translucent.%20In%20the%20meantime,%20steam%20the%20carrots%20in%20a%20separate%20pot.%20Add%20the%20cooked%20carrots,%20then%20add%20the%20chicken%20stock.%20Bring%20to%20a%20boil%20then%20lower%20heat%20to%20a%20simmer.%20Stir%20in%20chicken.%20In%20a%20small%20bowl,%20mix%20pancake%20mix%20and%20milk%20until%20it%20forms%20a%20soft%20dough.%20Place%20spoonfuls%20of%20dough%20on%20top%20of%20(not%20in)%20the%20chicken%20mixture.%20Cook%20uncovered%20over%20low%20heat%20for%2010%20minutes.%20Cover,%20then%20cook%20another%2010%20minutes.%20Place%20under%20broiler%20for%203-5%20minutes%20to%20brown%20if%20desired.%3C/p%3E){kind=link}
