Рецепт Snap Pea Chicken Over Rice
I often find it interesting that my thought process on a dish starts out as one thing and ends up being something completely different. Take, for example, today’s Snap Pea Chicken Over Rice.
I started out thinking I would make a Thai chicken dish but that didn’t happen. The good news is this recipe rocked.
Snap Pea Chicken Over Rice

Serves: 2
- 2 teaspoons coconut oil
- 3 cloves of garlic, minced
- ¼ jalapeno pepper, minced {more if you like spicy}
- 2 Scallions, chopped
- 1 Tablespoon lemon grass, minced
- 8 ounces boneless skinless chicken breast cut into strips
- 6 snap peas, blanched
- Juice of ½ Lime or Lemon
- ½ cup cilantro leafs (without the stems)
- 1 teaspoon soy sauce
- 2 tablespoons water
- ½ teaspoon oyster sauce
- ½ teaspoon fish sauce
- 3 teaspoons brown sugar
- 1 cup Jasmin Rice cooked
- Add the coconut oil in frying pan and let it get just a bit warm {not smoky hot},
Add the garlic, scallions and jalapeno pepper.
Stir for minute or so and don’t let it burn-turn down the heat on low.
Put in the chicken strips and turn them few times until it’s cooked through; about 3-4 minutes on medium-low temp on each side depending how big your strips are.
While chicken is cooking mix the soy sauce, water, oyster sauce, fish sauce and brown sugar in separate bowl,
At this point turn the heat on medium high, add sauce mixture ½ tsp at the time and taste each time until you get the flavor to your liking.
add the lime juice into the dish.
Serve the chicken on top of Jasmin rice
Add the fresh cilantro on top.

It’s a bit different that the Asparagus Chicken that I made last week that everyone loved. But this one is just as good.
Sometimes my brain just has so many recipe ideas swimming around that it’s amazing that I stay as organized as I do. But not always, trust me.
Luckily, I hit the jackpot with this recipe.
