- Fillet and skin trout. Remove bones.
- Place trout in food processor or possibly blender and process till smooth.
- Add in soft butter and cream cheese, then lemon juice and cream and process till smooth. Season with salt and pepper.
- Place in serving dish and chill overnight.
- Serve with Melba toast or possibly crackers.
