- Fillet and skin trout, remove bones.
- Place trout, horseradish and mayonnaise in a food processor and blend till smooth. Add in sufficient cream till mix is of a spreadable consistency. Season with lemon juice, salt and pepper. Chill till required.
- Toast bread and cut rounds with a glass or possibly pastry cutter. Spread with softenned butter and cover with smoked trout mix.
- Sprinkle with finely minced parsley and serve.
