Recently I began my new travel blog, The Southwest Through Wide Brown Eyes, and I've been busy going through hundreds and hundreds of photos. I try to choose the ones that, once posted, you can actually see what I'm seeing through my eyes; not just a photo of some place, but the emotions behind seeing it for the first time. Truth be told, I know for a fact that photos never do a breath taking area justice; but one can only try and, at least, get others interested in visiting and discovering for themselves.

,%20shredded%20cheese%20(Sargento%20Mexican%20mix)%20and%20an%20authentic%20homemade%20Mexican%20cheese%20(Queso%20Casero).%20The%20tortillas%20were%20fresh%20flour,%2010%20inch%20in%20diameter;%20couldn't%20find%20any%2012%20inch,%20otherwise%20I%20would%20have%20put%20two%20split%20brats%20into%20each%20burrito.%20The%20tortillas%20must%20be%20fresh,%20they're%20more%20flexible%20and%20you%20need%20that%20for%20the%20folding%20process.%3C/p%3E%3Cp%3EThe%20Queso%20Casero%20is%20a%20homemade%20cheese%20that%20can%20be%20made%20from%20either%20cow%20(smoky%20flavor)%20or%20goat%20(tangy%20flavor)%20milk.%20%20It%20is%20a%20semi-soft,%20mild,%20white%20cheese%20and%20does%20not%20melt%20rapidly.%20%20If%20you%20cannot%20find%20it,%20or%20prefer%20a%20melted%20cheese,%20Queso%20Fresco%20is%20an%20excellent%20substitute%20as%20it's%20a%20soft%20cheese,%20%20easily%20crumbles,%20and%20is%20more%20readily%20available%20in%20supermarkets.%3C/p%3E%3Cp%3EIn%20the%20center%20of%20each%20tortilla,%20spread%20out%201/4%20cup%20of%20cheese;%20with%20the%20Queso%20Casero%20I%20simply%20pulled%20it%20apart%20with%20my%20fingers%20into%20little%20pieces.%20%20Lay%20the%20split%20sausage%20on%20top%20of%20the%20cheese.%3C/p%3E%3Cp%3ESpread%20a%201/2%20cup%20of%20chili%20over%20the%20sausage,%20then%20another%201/4%20of%20cheese.%20%20While%20the%20shredded%20cheese%20will%20melt%20thoroughly%20during%20the%20grilling%20process,%20the%20Queso%20Casero%20will%20keep%20its%20firmer%20texture%20for%20the%20most%20part.%3C/p%3E%3Cp%3EThe%20final%20addition%20is%20the%20Frito%20corn%20chips,%20a%201/4%20cup%20should%20do%20it%20up%20nicely.%3C/p%3E%3Cp%3EFold%20the%20section%20of%20tortilla%20at%20the%20short%20end%20of%20the%20sausage%20as%20far%20as%20you%20can,%20being%20careful%20not%20to%20pull%20too%20tightly.%20%20You%20don't%20want%20to%20tear%20the%20tortilla,%20or%20have%20the%20corn%20chips%20puncture%20any%20holes%20in%20it.%3C/p%3E%3Cp%3ENow%20you%20want%20to%20fold%20the%20long%20ends%20over,%20again%20being%20careful%20not%20to%20tear%20or%20puncture%20the%20tortilla.%20%20If%20the%20short%20ends%20stick%20out,%20or%20become%20loose,%20gently%20tuck%20them%20back%20in.%20%20%20The%20burritos%20are%20now%20ready%20for%20the%20grill;%20I'm%20using%20a%20stove%20top%20flat%20top%20grill%20(oiled),%20but%20an%20electric%20is%20fine,%20or%20you%20might%20be%20daring%20and%20use%20a%20well%20oiled%20barbecue%20grill.%3C/p%3E%3Cp%3EPlace%20the%20burrito%20seam%20side%20down%20first;%20with%20the%20fresh%20tortillas,%20they%20are%20moist%20enough%20that%20you%20will%20not%20have%20to%20spread%20water%20around%20the%20edges%20to%20help%20seal%20them%20shut.%20%20Once%20browned,%20turn%20them%20over%20and%20brown%20the%20top%20side;%20remove%20to%20a%20plate%20and%20either%20cut%20them%20in%20half,%20or%20just%20pick%20up%20the%20whole%20thing%20and%20take%20that%20first%20big%20bite.%3C/p%3E%3Cp%3EThe%20Smoked%20Sausage%20Burrito%3C/p%3E%3Cp%3EDon't%20be%20stuck%20in%20a%20rut%20by%20cooking%20only%20what%20you%20know,%20or%20only%20the%20cuisine%20of%20where%20you%20live.%20%20Develop%20a%20passion%20for%20cooking%20and%20travel%20the%20world%20by%20experimenting%20with%20the%20various%20food%20items%20and%20cuisines.%20%20Enjoy!%3C/p%3E%3Cp%3EMary%20Cokenour%3C/p%3E){kind=link}
