Lemon 1 ea Gratted egg yolk 10 gr Gratted egg white 10 gr Salt Pepper

1. Spread the smoked salmon on the plate , garnish with onion rings, gratted egg white and yolk, chopped chives a lemon quarter, capers and a quenelle of dill crème fraiche.Toasted brioche bread on the side
