- Blanch peas in boiling water for 2 min. Refresh under cool running water, drain and set aside.
- Place wine in a large frying pan and bring to the boil. Stir in 1 c. cream and boil till sauce reduces and thickens.
- Place 4 slices smoked salmon, spring onions and remaining cream in a food processor. Process till mix forms a puree. Stir smoked salmon mix into sauce and cook till sauce is warm.
- Cut remaining salmon slices into strips. Add in salmon strips and peas to sauce. Toss well and season to taste with black pepper
- Cook fettucine in boiling water in a large saucepan following packet directions. Drain well. Spoon sauce over fettuccine and toss to combine.
- Serve immediately.
