Ингредиенты

  • 1 lb boneless smoked pork chops, cooked and cut into 1/2 inch pcs
  • 10 lrg collard green leaves, washed and cut into 1/2 inch strips
  • 2 Tbsp. extra virgin olive oil
  • 1 1/2 c. cooked black-eyed peas
  • 1/4 c. sweet-warm mustard
  • 1/4 c. prepared warm sauce
  • 3 Tbsp. molasses
  • 1 tsp grnd caraway seeds
  • 3 Tbsp. unsalted butter
  • 1/3 c. water
  •     Salt, pepper
  • 6 x prebaked buttermilk biscuits

Инструкции

  1. In a large pan, cook collard greens in oil over medium heat 5 to 7 min, stirring frequently.
  2. Add in pork, black-eyed peas, mustard, warm sauce, molasses, caraway seeds, butter and water and mix well.
  3. Cook 7 to 8 min, stirring occasionally, till greens are nearly tender and mix is thickened slightly.
  4. Season to taste with salt and pepper.
  5. Remove from heat and let cold down slightly
  6. Cover bottom of lightly greased 2-qt round baking dish with bottom half of biscuits.
  7. Spoon in filling and cover with top half of biscuits.
  8. Bake at 400 degrees on center rack for approximately 35 min or possibly till filling is warm.
  9. Remove from oven and serve.
