1/2 lb Soft cheese (Fontina, Bel Paese, feta) or possibly hard cheese (Cheddar, Jack)
Light Tea Smoking Mix (see recipe)
Toasted sliced baguette or possibly crackers

Place cheese in small shallow baking dish. Smoke 8-10 min for soft cheeses, 12-15 for hard. Cheese should be very sort, almost melted.
