%20While%20you%20can%20simply%20use%20a%20beer%20can%20and%20perch%20your%20chicken%20on%20top,%20it%E2%80%99s%20so%20much%20easier%20to%20do%20some%20with%20a%20rack.%20I%20have%20two%20-%20Steven%20Raichlen%20Stainless-Steel%20Beer-Can%20Chicken%20Rack%20with%20Drip%20Pan%20and%20a%20KitchenAid%20BBQ%20Vertical%20Chicken%20Roaster.%20Both%20will%20hold%20the%20beer%20can%20in%20place%20so%20you%20don%E2%80%99t%20have%20to%20worry%20about%20the%20chicken%20getting%20knocked%20over.%3C/p%3E%3Cp%3EHere%E2%80%99s%20what%20the%20chicken%20looks%20like%20on%20the%20racks%20(the%20two%20in%20the%20back).%20The%20one%20in%20the%20front%20is%20placed%20on%20top%20of%20the%20beer%20can,%20sans%20rack,%20and%20was%20propped%20up%20by%20one%20of%20the%20other%20chickens%20in%20our%20smoker.%3C/p%3E%3Cp%3EPreparing%20your%20beer%20can%20chicken%3C/p%3E%3Cp%3EThe%20method%20I%20use%20is%20based%20on%20a%20recipe%20from%20the%20Legends%20of%20Texas%20Barbecue%20Cookbook.%20I%20have%20a%20lot%20of%20barbecue%20cookbooks,%20but%20this%20one%E2%80%99s%20my%20favorite%20especially%20since%20it%20was%20recommended%20by%20an%20English%20friend%20who%20learned%20how%20to%20smoke%20meat%20when%20he%20went%20to%20school%20in%20Austin.%3C/p%3E%3Cp%3EI%20make%20my%20beer%20can%20chicken%20two%20ways%20%E2%80%93%20one%20with%20a%20dry%20rub,%20the%20other%20with%20a%20marinade.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ERemove%20the%20giblets%20%20and%20rinse%20the%20chicken%20cavity.%3C/p%3E%3Cp%3ESeason%20the%20chicken%20inside%20and%20out%20with%20the%20rub.%20Press%20the%20rub%20on%20to%20the%20skin,%20too.%20Allow%20to%20sit%20for%20at%20least%20an%20hour%20on%20the%20counter%20top.%3C/p%3E%3Cp%3EOpen%20the%20beer%20and%20empty%20half%20of%20it%20into%20the%20smoker%E2%80%99s%20drip%20pan.%3C/p%3E%3Cp%3ERefill%20the%20can%20with%20your%20favorite%20World%20Harbors%20marinade.%20I%20like%20Italian%20Grill,%20but%20Maine's%20Own%20Lemon%20Pepper%20&%20Garlic%20is%20also%20a%20good%20choice.%3C/p%3E%3Cp%3EShove%20the%20can%20into%20the%20chicken%20cavity,%20and%20place%20on%20your%20beer%20can%20roaster%20if%20you%E2%80%99re%20using%20one.%3C/p%3E%3Cp%3ESet%20up%20your%20smoker%20for%20indirect%20heat.%20Use%20wood%20chips,%20chunks%20or%20logs%20to%20set%20up%20a%20good%20level%20of%20smoke.%20(Electric%20smokers%20use%20pellets.%20I%20chose%20Jack%20Daniels%20Wood%20Pellets,%20but%20you%20can%20use%20hickory,%20apple,%20mesquite%20or%20other%20woods%20that%20go%20well%20with%20chicken.%3C/p%3E%3Cp%3EMaintain%20a%20smoker%20temperature%20of%20between%20225%20and%20275%20degrees%20F.%20(I%20set%20my%20smoker%20for%20250%20degrees.)%3C/p%3E%3Cp%3ESet%20the%20chicken%20on%20the%20grill%20on%20the%20beer%20can%20base,%20and%20cook%20for%20three%20hours.%20If%20you%20don%E2%80%99t%20use%20a%20dripping%20pan%20full%20of%20beer%20and%20water%20to%20%E2%80%9Csteam%E2%80%9D%20the%20chicken,%20baste%20with%20more%20World%20Harbors%20marinade%20every%20hour.%3C/p%3E%3Cp%3EWhen%20the%20chicken%20reaches%20an%20internal%20temperature%20of%20165%20degrees%20F,%20test%20for%20doneness%20by%20inserting%20a%20knife%20tip%20into%20the%20thickest%20part%20of%20the%20thigh.%20If%20the%20juices%20run%20clear,%20the%20chicken%20is%20done%20to%20medium.%20Note%20that%20the%20FDA%20recommends%20cooking%20to%20185%20degrees%20F.%20Many%20people%20find%20this%20overcooks%20and%20dries%20out%20the%20chicken,%20so%20use%20your%20best%20judgment.%3C/p%3E%3Cp%3ERemove%20the%20chicken%20and%20let%20sit%20for%2020%20minutes%20to%20let%20the%20juices%20%E2%80%9Cset.%E2%80%9D%20Slice%20and%20serve.%3C/p%3E%3Cp%3EMarinated%20Beer%20Can%20Chicken%3C/p%3E%3Cp%3EThis%20recipe%20is%20the%20same%20as%20the%20dry%20rub%20one%20except%20for%20one%20difference%20%E2%80%93%20you%20marinade%20your%20chicken%20in%20a%20full%20bottle%20of%20World%20Harbors%20marinade%20overnight!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1%20whole%20chicken,%20about%203%201/2%20pounds%3C/p%3E%3Cp%3E1%20bottle%20of%20World%20Harbors%20marinade%3C/p%3E%3Cp%3E1%20can%20beer%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ERemove%20the%20giblets%20and%20rinse%20the%20chicken%20cavity.%3C/p%3E%3Cp%3EPlace%20chicken%20in%20a%20large%20zip%20lock%20bag.%3C/p%3E%3Cp%3EEmpty%20entire%20bottle%20of%20World%20Harbors%20marinade%20into%20bag%20over%20chicken.%20Carefully%20press%20extra%20air%20out%20of%20bag,%20seal,%20and%20place%20in%20the%20refrigerator%20overnight.%3C/p%3E%3Cp%3EOpen%20the%20beer%20and%20empty%20half%20of%20it%20into%20the%20smoker%E2%80%99s%20drip%20pan.%3C/p%3E%3Cp%3ERemove%20chicken%20from%20the%20plastic%20baggie.%3C/p%3E%3Cp%3ECarefully%20refill%20the%20can%20with%20World%20Harbors%20marinade%20from%20the%20bag.%3C/p%3E%3Cp%3EShove%20the%20can%20into%20the%20chicken%20cavity,%20and%20place%20on%20your%20beer%20can%20roaster%20if%20you%E2%80%99re%20using%20one.%3C/p%3E%3Cp%3ESave%20leftover%20marinade%20for%20basting.%3C/p%3E%3Cp%3ESet%20up%20your%20smoker%20for%20indirect%20heat.%20Use%20w
