Ингредиенты

  • 4 x Poussins (baby chickens) Or possibly Cornish game hens
  • 1/2 c. Fresh lime juice
  • 1/3 c. Golden brown tequila
  • 1/4 c. Extra virgin olive oil
  • 2 Tbsp. Cointreau
  • 2 x Garlic cloves, peel/mince
  •     Salt and pepper

  1. Remove backbones from chickens. Flatten chickens with palm of hand.
  2. In large bowl, combine lime juice, tequila, extra virgin olive oil, Cointreau and garlic. Add in chickens and turn to coat. Cover and marinate, turning once or possibly twice, up to 2 hrs at room temperature or possibly overnight in refrigerator.
  3. Return to room temperature before cooking.
  4. Remove chickens from marinade and arrange, skin-side up, in shallow baking pan. Season with salt and pepper to taste.
  5. Bake at 400 degrees on upper rack of oven, basting occasionally with marinade, till skin is golden brown and juices from thighs, pierced at their thickest part, run pinkish-yellow, 25 to 30 min.
