.%3C/p%3E%3Cp%3EUntil%20recently%20we%20also%20had%20the%20brilliant%20Foodeaze%20as%20well,%20which%20is%20sadly%20currently%20closed,%20but%20happily%20due%20to%20reopen%20even%20better%20than%20before%20-%20we%20hope.%20But%20the%20reason%20I'm%20mentioning%20all%20this%20is%20actually%20the%20annual%20Exeter%20Festival%20of%20Food%20&%20Wine.%3C/p%3E%3Cp%3EI've%20been%20going%20since%20it%20started%20I%20think,%20and%20have%20seen%20it%20grow%20from%20a%20quite%20small%20affair%20with%20not%20really%20enough%20room%20for%20all%20the%20attention%20to%20a%20very%20professional%20set-up,%20with%20top%20name%20chefs,%20tents%20of%20food%20galore,%20and%20special%20night%20time%20events.%20True%20it%20may%20have%20lost%20some%20of%20the%20charm%20of%20earlier%20days,%20when%20the%20suppliers%20may%20have%20been%20a%20little%20more%20generous%20with%20their%20tastings,%20but%20it's%20still%20a%20great%20place%20to%20be.%20Hell,%20I%20even%20made%20sure%20I%20got%20back%20from%20Spain%20in%20time%20to%20attend!%3C/p%3E%3Cp%3EThis%20year%20I%20got%20my%20usual%20selection%20of%20goodies,%20the%20pride%20amongst%20them%20a%20shoulder%20of%20salt%20marsh%20lamb,%20a%20great%20piece%20of%20meat,%20well%20hung%20and%20full%20flavoured.%20I%20love%20lamb%20well%20done%20so%20I%20slow%20roasted%20it%20for%20about%204%20hours%20at%20150%C2%BAC%20(important%20that%20it's%20not%20a%20fan%20oven%20for%20this,%20otherwise%20it%20cooks%20to%20quick%20and%20can%20dry%20out)%20on%20top%20of%20about%205%20sliced%20up%20onions,%206%20or%20so%20cloves%20of%20peeled%20garlic%20and%20loads%20of%20fresh%20thyme,%20plus%20the%20usual%20salt%20&%20pepper.%20This%20was%20all%20pushed%20down%20into%20a%20big%20Creuset%20stewing%20pot.%20I'm%20really%20starting%20to%20fine%20tune%20this%20technique%20now%20for%20slow%20roasting%20-%20this%20time%20I%20used%20no%20liquid%20at%20all,%20just%20relied%20on%20the%20meat%20and%20the%20onions%20to%20produce%20liquid%20as%20they%20cooked,%20and%20sure%20enough%20it%20worked%20a%20treat.%20The%20secret%20is%20to%20try%20and%20make%20sure%20that%20the%20meat%20completely%20covers%20the%20other%20ingredients,%20that%20way%20it%20roasts%20and%20steams,%20and%20nothing%20gets%20burnt.%20The%20meat%20comes%20out%20beautifully%20tender%20and%20moist%20and%20the%20onions%20sweet%20and%20slightly%20caramelised.%3C/p%3E%3Cp%3EServed%20this%20with%20buttered%20minty%20new%20potatoes,%20rocket%20salad,%20and%20a%20rape%20seed%20oil%20minty%20mayo.%20Oh,%20and%20a%20nice%20drop%20of%20Australian%20red%20...%3C/p%3E%3Cp%3EI%20have%20to%20say%20though%20that%20part%20of%20the%20success%20of%20the%20dish%20was%20the%20sheer%20quality%20of%20the%20meat,%20which%20I'm%20happy%20to%20say%20has%20been%20providing%20leftovers%20all%20week%20for%20various%20risottos%20and%20stuffed%20pittas%20and%20wraps.%20When%20you%20start%20with%20such%20a%20good%20product%20you%20really%20have%20to%20do%20something%20pretty%20spectacular%20to%20screw%20it%20up.%20Kudos%20to%20the%20supplier,%20The%20Thoroughly%20Wild%20Meat%20Co.%3C/p%3E){kind=link}
