A few weeks ago I was contacted by the lovely people over at Mandarano, to sample their Balsamic Glaze and Sauce.

I absolutely LOVE any recipe with balsamic vinegar, so I wanted to try my hand at cooking with this glaze.

I was thrilled to find out that it's actually produced and bottled entirely in Modena, Italy. It is made from a centuries-old Modena family recipe and is perfect for those who on are on a gluten free diet because it is, in fact, gluten free. It's also suitable for glucose free and vegetarian diets as well.

The conclusion of my research lead to a big ball of excitement in my stomach as I patiently waited for my sample to arrive in the mail. I was so eager to receive it and spent a good few days figuring out which recipe I would make.

My sights were set on a slow cooker chicken recipe I produced a few days before the arrival of my sample.

Cooking with it was absolutely tantalizing! The aroma of the spices mixed with the glaze filled our kitchen and gave the whole house such a warm and comforting feeling. Try this recipe out and see for yourself!

Slow Cooker Rosemary, Garlic, & Balsamic Chicken

(serves 8-10)

Ingredients:

Directions:

1. Remove the neck and giblets from the chicken cavity and trim away excess fat.

2. Combine Kosher salt and pepper in a small bowl. Thoroughly rub the salt and pepper onto the surface of the whole chicken.

3. Place the garlic and rosemary sprigs inside the cavity.

4. Mix the olive oil with the Glaze and rub it all over the chicken.

5. Cover with lid and cook in slow cooker on low for 5 and a half hours, or until chicken is tender and the temperature in the thickets part of the thigh measures 165 degrees.

6. An hour and a half before chicken is finished, preheat oven to 375 degrees.

7. Take the potatoes, carrots, and onions and mix them with pepper, parsley flakes, and salt in a big bowl. Place on a baking sheet sprayed with nonstick spray. Bake in oven for an hour.

8. Remove chicken from slow cooker and glaze with Mandarano's sauce if needed. You can also glaze the vegetables with as well.
