Slow Cooker Pulled Pork {Low Carb}
- 3 lbs pork tenderloin
DRY RUB:
1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon coarse sea salt ½ teaspoon black pepper ½ teaspoon paprika ½ teaspoon bacon salt ¼ cup water ¼ cup Not Ketchup Spiced Fig
SAUCE
1 cup G Hughes Smokehouse Sugar free BBQ Sauce
In a small bowl, combine the onion powder, garlic powder, salt, pepper, paprika, bacon salt, . Mix well. Rub the spice mixture all over your pork. Add the water and the Not Ketchup to the slow cooker. Place the spice rubbed pork in the pot and cover. Cook on low for eight hours. Using two forks shred the meat to “pull” it apart. BBQ Sauce to the slow cooker. Cover and cook on high for about 10 minutes or until slightly thickened. I don’t even know where to begin.
The fact that I used a sugar-free barbecue sauce or that I added depth of flavor with Not Ketchup Spicy Fig Sauce.
Okay let’s start with the Not Ketchup. It’s new and I actually received my bottle at the Food and Wine Conference that I attended in Orlando Florida.
I wanted to use the whole bottle on this recipe, but decided to add a sugar-free barbecue sauce, just to be on the safe side.
And, since I don’t want carbs, I skipped the bread and served it on top of shredded cabbage.
Genius, don’t you think? I don’t need no stinkin’ bread to ruin my pulled pork. Oh and I served it with some baked beans. A perfect combo, for sure.
Lately, I have been savoring my Sunday afternoons, and the truth be told as of late, I haven’t done much cooking. But I really wanted to make a slow cooker recipe so that we could all just eat at our leisure. You know, as much as I tried to recreate the “family dinner table”, the older the kids got the less frequent we were all together.
I have lots of dinner table memories in my pocket, but adjusting to everyone eating according their own schedule has been a tad bit difficult.
I am also waiting tor the day that I am not cleaning up after everyone. Oh the challenges of family life.
At least I know they all love what I create.
