Life moves fast, but here's one delicious reason to slow down: a hearty slow cooked Pork and Fennel Stew with healthy black beans and vegetables in a thick tomato-based sauce.
Fennel seed is often the flavor you taste when you bite into a pork sausage. It is one of my favorite herbs to add to pork dishes!

Slow Cooker Pork and Fennel Stew
Makes: 4 Servings
Hands-on Time: 20 minutes
Cook Time: 6 to 7 hours on high, 3 to 4 hours on low in the slow cooker
INGREDIENTS
- 12.5 oz / 354 g pork loin chops (4)
- 1/2 tsp. each salt and black pepper
- 1 Tbsp. canola oil
- 1/2 red onion, chopped
- 2 carrots, peeled and chopped
- 2 cloves garlic, minced
- 1 tsp. fennel seeds, crushed (or use 1/2 tsp. ground fennel)
- 1/2 cup sodium-reduced chicken stock
- 2 1/2 cups (23 oz / 660 ml) bottled strained tomatoes
- 1 Tbsp. sodium-reduced soy sauce
- 1/2 tsp. dried oregano
- 1/2 cup canned black beans, drained and rinsed
- 1/4 cup chopped fresh parsley
DIRECTIONS
Trim fat off pork and cut into 1-inch(2.5 cm) cubes. Sprinkle with half of the salt and pepper. In a skillet, heat half the oil over medium heat. Add pork and brown all sides, about 1 minute per side. Transfer pork to slow cooker.
In the same skillet, heat remaining oil over medium heat. Add onion and carrots. Cook and stir until vegetables begin to soften, about 4 minutes. Add garlic and fennel. Cook and stir for 1 minute longer. Stir in chicken stock and use a wooden spoon to scrape up brown bits from pan. Pour in slow cooker.
Add tomatoes, soy sauce and oregano to slow cooker. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours. Stir in black beans and parsley.
