%20I've%20even%20made%20pulled%20pork%20enchiladas%20which%20were%20out%20of%20this%20world.%3C/p%3E%3Cp%3EBut%20let's%20face%20it,%20it's%20a%20hassle%20to%20make%20right?%20Lot%20of%20work?%20Pain%20in%20the%20butt?%20(no%20pun%20intended)%3C/p%3E%3Cp%3ENOPE!%20It's%20really%20easy.%20That's%20what%20a%20SLOW%20COOKER%20is%20for.....!%3C/p%3E%3Cp%3EAnd%20to%20boot,%20this%20recipe%20is%20absolutely%20delicious!%20And%20it's%20interesting%20in%20that%20you%20can%20just%20make%20the%20pork,%20and%20serve%20it%20with%20whatever%20sauce%20you%20like,%20OR,%20take%20the%20drippings%20from%20pan,%20add%20a%20few%20ingredients,%20reduce%20the%20sauce%20and%20bake%20it%20into%20the%20pulled%20pork.%20I%20did%20this,%20and%20amazingly,%20ate%20the%20pork%20just%20that%20way,%20with%20no%20additional%20sauce,%20it's%20THAT%20good.%3C/p%3E%3Cp%3EGive%20it%20a%20try.%20You'll%20thank%20me.%20Well,%20some%20of%20you%20will%20thank%20me.%20Most%20will%20make%20it,%20enjoy%20it,%20and%20never%20tell%20me.%20But%20that's%20ok.%20I'll%20know%20anyway.%3C/p%3E%3Cp%3EAdapted%20from:%20Foodie%20with%20Family.%3C/p%3E%3Cp%3EPour%20the%20olive%20oil%20into%20the%20slow%20cooker%20and%20spread%20around%20evenly.%3C/p%3E%3Cp%3EPlace%20the%20pork%20shoulder,%20fat%20side%20up,%20into%20the%20slow%20cooker.%20Toss%20in%20the%20peeled%20garlic%20cloves.%3C/p%3E%3Cp%3ESprinkle%20the%20roast%20with%20the%20salt,%20pepper,%20red%20pepper%20flakes,%20oregano,%20and%20cumin.%20Pour%20the%20lime%20juice%20and%20broth%20around%20the%20roast,%20and%20pour%20or%20spoon%20the%20frozen%20orange%20juice%20concentrate%20onto%20the%20top%20of%20the%20roast.%3C/p%3E%3Cp%3ECook%20on%20high%20for%201%201/2%20hours,%20turn%20heat%20down%20to%20low%20and%20let%20cook%20for%2012%20hours.%20Check%20the%20pork%20and%20make%20sure%20it%20is%20pull-apart%20tender.%20Turn%20off%20cooker%20and%20let%20cool%20down%20and%20then%20place%20to%20roast%20in%20the%20refrigerator%20to%20chill%20all%20night%20long.%20If%20your%20cooker%20doesn't%20have%20the%20stoneware%20insert,%20just%20place%20the%20roast%20in%20a%20large%20bowl,%20cover,%20and%20refrigerate.%20Reserve%20all%20the%20liquids.%3C/p%3E%3Cp%3EThe%20next%20day,%20remove%20from%20refrigerator,%20place%20on%20cutting%20board,%20and%20remove%20all%20the%20exposed%20chilled%20fat%20from%20the%20pork%20and%20discard.%20(And%20the%20bone%20if%20bone-in)%3C/p%3E%3Cp%3EThe%20meat%20will%20be%20easy%20to%20pull%20apart.%20Use%20your%20fingers%20or%20two%20forks%20and%20completely%20separate%20the%20pork.%20At%20this%20time%20you%20can%20also%20chop%20it%20with%20a%20knife%20to%20make%20more%20concise%20pieces.%3C/p%3E%3Cp%3ENow,%20it's%20Decision%20time......%20you%20are%20done,%20and%20could%20now%20use%20the%20pork%20in%20sandwiches,%20slather%20with%20sauce(s),%20cook%20in%20enchilada's%20or%20whatever.....Or,%20take%20the%20next%20step......%20which%20is%20to%20do%20the%20following:%20(Check%20it%20out,%20it's%20kinda%20cool)%3C/p%3E%3Cp%3EDrain%20the%20reserved%20pan%20juices%20through%20a%20strainer%20or%20cheesecloth%20and%20pour%20the%20liquids%20into%20a%20sauce%20pan.%3C/p%3E%3Cp%3EAdd%20two%20tablespoons%20cider%20vinegar%3C/p%3E%3Cp%3E1%20tsp%20minced%20garlic%3C/p%3E%3Cp%3E2%20tablespoons%20lime%20juice%3C/p%3E%3Cp%3E1/2%20teaspoon%20crushed%20red%20pepper%20flakes%3C/p%3E%3Cp%3E1/2%20teaspoon%20dried%20mustard%3C/p%3E%3Cp%3EBring%20to%20a%20boil,%20reduce%20heat%20and%20simmer%20until%20sauce%20is%20reduced%20by%2075%25%3C/p%3E%3Cp%3EPlace%20pork%20in%20a%209%20x%2013%20casserole%20dish%20and%20pour%20the%20reduction%20sauce%20all%20over%20the%20pork.%20Cover%20with%20tinfoil%20and%20bake%20at%20350%20degrees%20for%2030%20minutes.%3C/p%3E%3Cp%3EI%20found%20the%20pork%20to%20taste%20SOOOO%20good%20with%20this%20baked%20in%20marinade%20that%20I%20didn't%20even%20use%20any%20other%20sauce%20when%20eating%20it.%3C/p%3E){kind=link}
