I got this recipe from a friend of mine that swears it is one of her and her husband’s favorite go-to meals. I have to say, after making it, changing it up just a bit, it is quite delicious and will definitely be added to my recipe rotation this fall and winter. I used lean sirloin pork chops and fresh mushrooms to make this rich and healthful meal and made it perfectly complete with mashed potatoes and oven baked asparagus.
Slow Cooker Pork Chops with Mushroom Gravy
INGREDIENTS:
- 4 (1-inch thick) lean sirloin pork chops, trimmed of fat
- 1 tablespoon olive oil
- One large yellow onion, sliced
- 3 tablespoons quick cooking tapioca**
- 2 (10.5 cans) 99% fat-free cream of mushroom soup
- 1 cup 100% apple juice
- 1/2 cup apple cider vinegar
- (8oz) fresh baby bella mushrooms
- 1/4 cup Worchestershire sauce
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
DIRECTIONS:
Heat oil in a medium saute pan and sear pork chops on both sides until golden brown. Place onion and mushrooms in the bottom of the slow cooker. Add chops over top. Grind the tapioca with a mortar and pestle until fine. Combine tapioca, soup, juice, vinegar, Worchestershire sauce and spices. Pour over chops. Cover and cook on low for 8 hours.
**NOTE: I used Kraft Minute Tapioca. This can be found in the same aisle that you would find dry pudding mixes in your grocery store.
