%20for%20guests%20the%20other%20night%20using%20my%20new%20favorite%20toy%20and%20I%20plan%20a%20lasagna--which%20it's%20perfect%20for--later%20in%20the%20week.%3C/p%3E%3Cp%3EI've%20already%20talked%20enough%20about%20my%20new%20%22love%22%20so%20onto%20the%20chicken--%3C/p%3E%3Cp%3EThe%20slow%20cooker%20came%20with%20a%20Campbell's%20booklet%20of%20recipes.%20You%20know,%20the%20USUAL,%20but%20one%20caught%20my%20eye%20was%20a%20chicken%20recipe%20done%20with%20rice.%20%20Obviously%20the%20photo%20of%20this%20was%20of%20something%20oven%20baked,%20but%20I%20didn't%20like%20the%20idea%20of%20boneless%20skinless%20breasts%20in%20this%20especially%20when%20the%20instructions%20did%20not%20say%20anything%20about%20browning.%20%20And%20it%20was%20just%20basic%20bland%20ingredients%20like%20plain%20rice%20and%20cream%20of%20mushroom%20soup...sorry,%20that%20dish%20probably%20not%20only%20tasted%20bland%20as%20heck%20but%20it%20would%20be%20pretty%20creepy%20to%20look%20at%20too--all%20white.%20%20NO%20THANKS.%3C/p%3E%3Cp%3ESo%20I%20just%20rolled%20with%20that%20idea%20and%20made%20the%20sauce%20more%20savory%20with%20the%20addition%20of%20onions,%20garlic%20and%20twice%20the%20amount%20of%20mushrooms--and%20I%20also%20used%20jasmine%20rice%20for%20it's%20superb%20flavor.%20%20I%20added%20some%20Romano%20cheese%20too%20for%20an%20additional%20oomph.%20%20Plus%20more%20milk%20for%20creaminess%20(I%20had%20my%20fingers%20crossed%20on%20that%20one%20that%20it%20would%20have%20the%20desired%20effect--it%20did).%20%20I%20also%20browned%20the%20chicken%20and%20I%20used%20drumsticks%20because%20I%20had%20a%20lot%20of%20them%20and%20they%20slow%20cook%20so%20well.%3C/p%3E%3Cp%3ECreamy%20and%20deliciousThis%20turned%20out%20fantastic!%20%20So%20much%20so%20that%20I%20thought%20you%20could%20eliminate%20the%20chicken%20entirely%20and%20just%20make%20the%20rice%20as%20a%20holiday%20side%20dish!%3C/p%3E%3Cp%3ESlow%20Cooker%20Chicken%20with%20Creamy%20Mushroom%20Rice%3C/p%3E%3Cp%3E*You%20may%20use%20boneless%20skinless%20breast%20(I%20don't%20recommend%20it%20as%20I%20find%20boneless%20skinless%20breast%20gets%20dry%20and%20stringy%20with%20slow%20cooking),%20but%20if%20you%20do,%20use%20about%202%20lbs.%20%20And%20regular%20long-grain%20rice%20may%20be%20substituted%20as%20well%20as%20brown%20rice,%20but%20there%20will%20be%20loss%20of%20flavor%20since%20jasmine%20has%20a%20particular%20flavor%20which%20stands%20out.%3C/p%3E%3Cp%3EHeat%20oil%20in%20large%20skillet%20over%20medium-high%20heat.%20%20Brown%20chicken%20drumsticks%20on%20all%20sides;%20remove%20to%20a%20platter.%3C/p%3E%3Cp%3EIn%20the%20same%20skillet,%20brown%20the%20drained%20mushrooms,%20onions%20and%20garlic.%20Remove%20from%20heat%20and%20add%20the%20soup.%20%20Stir%20in%20milk%20slowly%20so%20mixture%20is%20smooth.%20%20Add%20the%20salt,%20pepper%20and%20grated%20cheese.%20%20Stir%20in%20the%20rice.%3C/p%3E%3Cp%3EAdd%20the%20soup/rice%20mixture%20to%20a%205-6%20quart%20slow%20cooker%20(I%20used%20the%20casserole%20crock%20for%20this--shaped%20like%20a%2013%20x%209%20baker).%20Place%20drumsticks%20on%20top%20of%20rice%20(I%20could%20do%20this%20in%20a%20single%20layer%20with%20the%20rectangular%20cooker,%20but%20you%20may%20have%20to%20layer%20depending%20on%20the%20shape%20of%20your%20slow%20cooker)%3C/p%3E%3Cp%3ECook%20on%20HI%203-4%20hours%20or%20until%20chicken%20is%20done%20and%20rice%20is%20tender,%20yet%20creamy.%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3ESlow%20Cooker%20Chicken%20with%20Creamy%20Mushroom%20Rice%3C/p%3E%3Cp%3ECopyright%20%C2%A9%20Judith%20Hannemann%20aka%20The%20Midnight%20Baker%202014.%20All%20Rights%20Reserved.%20No%20part%20of%20this%20website%20may%20be%20reproduced%20without%20The%20Midnight%20Baker's%20express%20consent.%3C/p%3E%3Cp%3EFollow%20The%20Midnight%20Baker's%20board%20Midnight%20Baker's%20Slow%20Cooker%20Recipes%20on%20Pinterest.%3C/p%3E){kind=link}
