%3C/p%3E%3Cp%3EMy%20aunt%20and%20I%20decided%20to%20make%20cheese%20perogi's%20because%20neither%20one%20of%20us%20wanted%20to%20take%20the%20time%20to%20bake%20the%20potatoes%20and%20mash%20them%20up.%20%20(though,%20the%20potato%20ones%20are%20my%20fave)%3C/p%3E%3Cp%3EThe%20key%20to%20this%20dish%20is%20the%20dough.%20%20For%20years%20my%20family%20made%20it%20a%20certain%20way,%20and%20had%20a%20hell%20of%20a%20time%20getting%20the%20dough%20to%20turn%20out%20properly.%20%20Then,%20a%20family%20friend%20suggested%20the%20addition%20of%20the%20sour%20cream.%20%20(picture%20angels%20singing)%20%20The%20dough%20was%20perfect!%3C/p%3E%3Cp%3EThe%20next%20important%20part%20of%20this%20dish%20is%20the%20browned%20butter.%20%20Make%20sure%20you%20don't%20burn%20the%20butter...if%20it%20gets%20too%20dark,%20just%20dump%20and%20start%20over.%20%20:)%3C/p%3E%3Cp%3EHappy%20cooking!%20%20(and%20enjoy%20my%20families%20fave%20recipes!)%3C/p%3E%3Cp%3Emelt%20in%20your%20mouth%20deliciousness...%3C/p%3E%3Cp%3ESlovak%20Perogies%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ETo%20make%20the%20filling:%3C/p%3E%3Cp%3ECombine%20the%20cheese,%20egg,%20sugar%20and%20salt%20in%20a%20bowl%20and%20stir%20to%20combine.%20%20Set%20aside.%3C/p%3E%3Cp%3ETo%20make%20the%20dough:%3C/p%3E%3Cp%3EGet%20a%20large%20cutting%20board.%20%20Pile%20the%20flour%20on%20top%20and%20then%20create%20a%20little%20%22hole%22%20in%20the%20middle.%20%20Carefully%20crack%20the%20eggs%20into%20the%20hole.%20%20Then,%20using%20your%20hands,%20gently%20mix%20the%20eggs%20into%20the%20flour.%3C/p%3E%3Cp%3EOnce%20the%20eggs%20are%20mixed%20in,%20add%20the%20sour%20cream.%20%20Mix%20with%20your%20hands%20to%20create%20a%20nice%20pliable%20dough.%20%20If%20it's%20too%20sticky,%20you%20can%20add%20a%20little%20more%20flour.%3C/p%3E%3Cp%3ERemove%20the%20dough%20from%20the%20board.%20%20Spread%20some%20flour%20over%20the%20cutting%20board%20and%20then%20roll%20out%20the%20dough.%20%20You%20don't%20want%20it%20too%20thin...and%20make%20sure%20it's%20even%20all%20the%20way%20around.%3C/p%3E%3Cp%3EScore%20the%20dough%20into%20squares.%20%20Place%20about%201Tbs%20to%202Tbs%20of%20the%20cheese%20filling%20in%20the%20middle%20of%20each%20square.%20%20(not%20too%20much%20or%20the%20perogi%20will%20burst%20while%20cooking.)%3C/p%3E%3Cp%3E*as%20you%20make%20the%20perogi's,%20get%20a%20large%20pot%20of%20water%20boiling*%3C/p%3E%3Cp%3ERemove%20any%20excess%20dough,%20re-form%20and%20then%20roll%20out%20again.%20%20Repeat%20procedure%20until%20all%20your%20filling%20is%20gone.%20%20You%20may%20have%20some%20leftover%20dough.%3C/p%3E%3Cp%3ENext,%20fold%20over%20the%20dough%20to%20create%20a%20triangle.%20%20Now%20here's%20the%20REALLY%20important%20part.%20%20You%20have%20to%20make%20sure%20that%20you%20pinch%20all%20the%20way%20around%20and%20seal%20the%20dough.%20%20Any%20open%20areas%20and%20the%20filling%20will%20leak%20out.%20%20If%20the%20dough%20is%20a%20little%20dry,%20try%20wetting%20your%20fingers%20with%20a%20little%20water%20to%20make%20sure%20it%20sticks.%3C/p%3E%3Cp%3EOnce%20you've%20made%20all%20your%20perogi's,%20gently%20add%20them%20to%20the%20boiling%20water.%20%20Now,%20here's%20where%20the%20family%20instructions%20come%20in:%20%20you'll%20know%20they%20are%20done%20when%20the%20perogi's%20are%20floating%20in%20the%20water.%20%20Yep,%20that's%20as%20good%20as%20an%20answer%20as%20I%20could%20get.%20%20No%20specific%20time.%20%20So,%20use%20your%20best%20judgement%20here.%3C/p%3E%3Cp%3EWhen%20they%20are%20floating%20and%20ready,%20use%20a%20slotted%20spoon%20and%20gently%20remove%20them%20one%20at%20a%20time%20to%20a%20waiting%20colander.%20%20(do%20not%20rinse)%20%20Now,%20you%20may%20lose%20some%20while%20cooking.%20%20We%20lovingly%20call%20these%20broken%20ones%20%22cripples.%22%20%20(my%20cousin%20coined%20the%20term%20and%20it%20stuck)%20%20Cripples%20are%20free%20to%20eat%20at%20any%20time.%20%20:)%20%20No%20need%20to%20wait%20till%20dinner.%3C/p%3E%3Cp%3EGet%20a%20large%20skillet%20ready%20and%20melt%20a%20whole%20stick%20of%20butter.%20%20(yes,%20the%20whole%20stick)%20%20Over%20medium%20heat.%20%20You%20need%20to%20keep%20an%20eye%20on%20the%20butter.%20%20You%20want%20a%20beautiful%20brown%20color.%20%20You%20can%20test%20to%20see%20if%20the%20butter%20is%20ready%20by%20taking%20a%20bit%20of%20cooked%20perogi%20(like%20the%20ones%20that%20broke)%20and%20placing%20it%20in%20the%20skillet.%20%20If%20the%20butter%20coats%20the%20perogi%20and%20sticks,%20it's%20ready.%3C/p%3E%3Cp%3ENext,%20add%20two%20or%20three%20perogi's%20at%20a%20time.%20%20Turn%20to%20coat%20with%20the%20butter.%20%20(you%20are%20not%20sauteing%20here...just%20coating).%20%20Remove%20and%20set%20in%20a%20waiting%20casserole%20dish.%20%20Repeat%20with%20all%20remaining%20perogi's.%3C/p%3E%3Cp%3ENow...dig%20in!!!%20%20These%20wonderful%20perogi's%20are%20an%20all%20time%20family%20fave.%3C/p%3E){kind=link}
