16 ounces (4) boneless, skinless chicken breasts, pounded to ½ inch thick 2 cups buttermilk (you will only use 1 cups total) ½ Tablespoon hot sauce Vegetable oil spray (or non-stick spray) ¼ cup arrowroot powder (original recipe uses all-purpose flour) 2 cups fried onions like French's French Fried Onions (crushed) (original recipe uses cornflake crumbs) ½ teaspoon paprika ½ teaspoon kosher salt ¼ teaspoon freshly ground black pepper ¼ teaspoon cayenne ¼ teaspoon garlic powder ¼ teaspoon onion powder 1 teaspoon poultry seasoning
Rinse the chicken breasts in cold water, then place them in a resealable plastic bag with the buttermilk and hot sauce. Close the bag, shake until the chicken pieces are fully coated, and refrigerate for at least 2 hours or overnight. Position a rack in the center of the oven. Preheat the oven to 400°F. Spray a wire rack with vegetable oil spray and place it in a roasting pan or on a baking sheet. Place the flour on a plate. Mix the crumbs, paprika, salt, black pepper, cayenne, garlic powder, onion powder, and poultry seasoning in a bowl until the ingredients are evenly distributed. Remove the chicken breasts from the bag and place them on a plate. Pour the marinade into a medium bowl. Dredge each breast with the flour until fully coated, shaking off any excess. Then coat the chicken in the marinade, followed by a dredging in the crushed onion mixture. Arrange the chicken pieces on the prepared wire rack. Bake for 15 minutes. Reduce the oven temperature to 350°F and bake until cooked through and crisp, 15 to 20 minutes. The nutritional information is based on 1 cup buttermilk.
The prep time does not include marinating the chicken in buttermilk (2 hours or up to 24 hours) 3.2.2807
What does Back Around the Table mean to you?
To me, it always brings me back to family dinners where we all sat around the table, sipped on wine, exchanged stories and shared incredible food.
It’s comfort and beyond.
David Venable’s new cook book “Back Around The Table” is all that and more. Beautifully layed out, easy to read recipes all in one place. With sections such as Mix and Mingle, Brunch and Beyond and my favorite, Light and Bright.
This Skinny Fried Chicken recipe that I tried from the book was a perfect fit. I only tweaked it a bit to reduce the amount of carbohydrates, but trust me, either version is fantastic.
Thanks for stopping by and have a great day.
