Skillet Vegetables on Cheese Toast

Skillet Vegetables on Cheese Toast-this recipe is super simple and good for meal time or a healthy snack!

This recipe has my name all over it and that’s why I chose it as another recipe to share from Better Homes and Garden. I just made two easy additions to the original recipe that makes it even more delicious: artichokes and roasted red peppers. They are my favorite!

I love eating fruits and vegetables. They are a big part of my family’s life and we eat a lot of them with every meal. Incorporating so many delicious and good for your ingredients helps us feel good about what we are eating and gives our bodies the fuel to take on each day…especially when most of it includes chasing after a very active two year old! Cheesy bread with sautéed veggies feels like an indulgence without leaving you feeling guilty.

Sometimes it can be hard to think of new ways to serve and prepare vegetables. Toasted bread is the perfect plate for loads of great toppings and that’s why this recipe works so well. When preparing my vegetables for this recipe I added ½ cup of quartered, canned artichokes packed in water and ¼ cup sliced roasted red pepper also packed in water to the last minute of cooking. That way they had a chance to heat through with the rest of the vegetables without falling apart in the heat.

The roasted red peppers are a sweet addition to the rest of the vegetables and have a nice smoky taste. The artichokes are very mild in flavor and the smooth texture compliments the warm creamy cheese. I love the idea of adding sautéed vegetables to cheesy toast and I think the addition of the artichoke hearts and peppers is perfect!

These toasts are substantial for your family or friends to eat with out having to go to too much trouble or fuss making them. They only take a few minutes to prepare but it’s a meal that is teaming with flavor and one you don’t have to feel guilty about eating.
