  • 2 Tbsp. White cornmeal
  • 1/2 c. Bacon drippings
  • 1 c. Lowfat milk
  • 1/2 tsp Salt

  2. Cooking Time: about 25 min
  3. Preheat oven to 375 degrees. Pour about half the bacon grease into a 10-inch cast-iron skillet, place in the oven and heat till fat just barely starts to smoke.
  4. In a medium bowl, mix cornmeal, lowfat milk and salt. Pour batter into warm skillet and bake 12 min. Remove skillet from oven, pour the rest of the bacon fat on top and return to oven about 13 min. ("Some crumbled bacon on top," Walters says, "wouldn't hurt, either.")
