Don't make Thanksgiving overtly difficult! Enjoy family and friends- preparing foods together..include the kiddos, too! They are as anxious as you are to welcome the spread of goodness on the dining room table. Here is my final recipe before this big day arrives- Allow the young ones to mix the potatoes with the olive oil and herbs, and then help them arrange the cubes on a foil lined baking sheet and place it in the oven- easy enough, right?
Side Note: I have just realized that all of my posts this week have been a form of starch. (Sorry.) Can you tell where my heart desires?
Herb Roasted Sweet Potatoes
INGREDIENTS:
- 3-4 large sweet potatoes, rinsed and scrubbed
- 3 teaspoons olive oil
- 3 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 1/4 teaspoon salt
DIRECTIONS:
Preheat oven to 350 degrees. Cube potatoes, leaving skin on, into 1-inch pieces. To a large bowl, add potatoes and remaining ingredients. Toss to combine well. Bake for 25-30 minutes, stirring once, until potatoes are slightly crisp on the outside and soft when squeezed.
