- Bring water & clam juice to boil over high heat. Reduce heat to simmer.
- Heat butter in saute/fry pan over medium-high heat. Stir in Italian seasoning & bay leaf. Add in rice. Stir till coated with herb butter. Pour 1/2 c. warm broth into pan with rice. Cook 1 minute over medium-high heat till broth evaporates. Stir carrot into pan. Add in 1/2 c. broth. Stir. When broth has been absorbed into rice mix, add in wine & shrimp to pan. Cook about 1 minute add in remaining broth. Stir well. Cook till rice is al dente. Stir in minced tomato, salt & pepper to taste. Serve at once.
