Ингредиенты

  • 4 c. cooked white rice room temperature
  • 3 lrg Large eggs beaten with
  •     a healthy pinch of white pepper and salt
  • 1 Tbsp. peanut oil pIus
  • 1 tsp peanut oil
  • 1 1/2 tsp oyster sauce
  • 1 Tbsp. chicken stock
  • 2 tsp soy sauce
  • 1 tsp white wine
  • 3/4 tsp sugar
  • 1 pch freshly-grnd white pepper
  • 1/2 tsp sesame oil
  • 1 1/2 tsp chopped ginger
  • 2 c. broccoli stems peeled, and
  •     cut into 1/4" dice
  • 1/4 lb medium shrimp shelled, deveined,
  •     and cut into 1/2" pcs
  • 1/4 c. sun-dry tomatoes washed in hot
  •     water, cut into 1/2" by 1/4" pcs
  • 1/2 c. green onions finely sliced
  • 3 Tbsp. chopped fresh coriander (cilantro)

  1. Prepare Basic Rice recipe. Allow to cold to room temperature.
  2. Scramble Large eggs in 1 tsp. of peanut oil over medium heat till cooked; then cut into small pcs and reserve. Combine sauce ingredients and reserve.
  3. Heat wok over high heat for 30 seconds. Add in 1 Tbsp. peanut oil and coat wok with spatula. When a wisp of white smoke appears, add in ginger; stir briefly. Add in broccoli stems; stir and cook for 20 seconds. Add in shrimp; stir and cook for 30 seconds. Add in the cooked rice and mix well, turning, for 5 nlinutes till the rice mix is very warm.
  4. Stir the sauce, pour over rice, and mix thoroughly. Add in Large eggs and stir. Add in sun-dry tomatoes and mix to combine thoroughly. Add in the green onions and coriander and mix well. Turn off heat, transfer to a heated dish, and serve.
  5. This recipe yields 6 servings.
  6. Comments: Here is a meatless version of chau fon, with the color of the sun-dry tomatoes fooling the eye into thinking it might be barbecued pork. The tongue will tell you differently.
