Ингредиенты

  • 3/4 c. flour
  • 1/2 c. chickpea flour
  • 1/2 tsp baking pwdr
  • 1 tsp salt
  • 1/2 tsp freshly-grnd white pepper
  • 2 Tbsp. extra virgin olive oil plus additional
  •     extra virgin olive oil for frying
  • 3/4 c. shaved green onions
  • 2 Tbsp. minced parsley see * Note
  • 1/2 lb shrimp peeled, deviened,
  •     and finely minced
  • 1 1/2 c. lowfat milk
  • 3/4 c. lowfat sour cream
  • 1/4 c. minced cilantro
  • 1 Tbsp. lime juice
  • 1 tsp Emeril's Essence see * Note
  • 1/4 tsp salt

  1. Into a large mixing bowl, sift the flour, chickpea flour, baking pwdr, salt, and pepper.
  2. In a saute/fry pan set on a medium-high heat, add in the extra virgin olive oil and saute/fry the green onions till soft, about 2 min. Add in the green onions, parsley, Essence, and the shrimp to the dry ingredients. Slowly add in the lowfat milk and stir to make a batter. Cover and let rest for 1 1/2 hrs.
  3. In a large saute/fry pan set over a medium-high heat, add in sufficient oil to coat the bottom of the pan. Spoon 2 Tbsp. of batter into the pan and cook till bubbles form, about 2 min. Turn and cook till golden, about 2 min on the second side. Drain on paper towels and repeat with the remaining batter.
  4. Serve warm with Cilantro and Lime Crema.
  5. For Cilantro and Lime Crema: In a mixing bowl, combine all the ingredients and stir well to blend.
  6. This recipe yields 4 servings.
