Shredded Thai Chicken Salad
- 1 cup shredded purple cabbage
- 1 cup shredded white cabbage
- 3 carrots, julienned
- bunch cilantro, chopped
- 4 ounces cooked boneless, skinless chicken thinly sliced
- 1 green onion, cut on the diagonal
- 2 Tablespoons of my Peanut Vinaigrette
In a large bowl, toss all the ingredients.

Remember i told you that my newest love is Thai chicken salad with peanut dressing? Well, Here is my version. Pretty damn delicious, if I may say so myself.
Doesn’t the purple cabbage make this dish eye-catching? It’s such a pretty purple color. Doesn’t cauliflower come in purple too? I need me some purple cauliflower pronto.
Maybe I can make purple people eaters. I know a few people who need to be eaten. haha.
