Shortcut Cupcakes and a Winner!

This season I’m changing my middle name to shortcut. Yep, just call me “Sandra Shortcut”. Seriously who is playing around with the time? It’s not like I/we didn’t know 350 days ago, give or take a day or two that Christmas was coming. What happened to all the posts that I wanted to do, the decorations I’d planned, the weight I wanted to lose. Ummmm, strike that last one (insert embarrassed face).

Maybe I’ve set unrealistic expectations on my time and my budget. Maybe subconsciously I’ve declared this a less is more season. Whatever the reason, it is what it is and I’m using shortcuts whenever and wherever I can, don’t judge me please.

That being said, our resident princess Gabbi wanted something to snack on. Her staple diet of ramen noodles and oatmeal just wasn’t cutting it this weekend. I lost count of how many times she looked in the fridge and cabinets for something to snack on. Being the doting Nanni that I am, I promised to make pancakes for breakfast. I kept my word and they were from a box and she had her fill. Wanting to give her a little lagniappe (a little something extra) I made cupcakes, from a boxed mix, with sprinkles no less. She didn’t touch them. Seriously? This is the kid that used to love anything with binkles, that’s what she used to call them. Oh well, the binkled cupcakes will have a new life in about a week as funfetti cake truffles. I have children coming in from three states that will devour them, all is not lost.

For these cuppies I used the Meijer’s brand of yellow cake mix. I added 2 tsp of vanilla and 2 TBS of sprinkles. Bada boom bada Bing! I had some buttercream frosting on hand and piped a quick spiky decoration on them. What I love, love, love about these pictures are the Santa mugs. My mom was heavy into ceramics and she made these. I have the whole set and the ball at the end of Santa’s hat is missing on most of them. She loved the holidays and did everything she could to make them special for us. Every bit of being a hostess, every bit of making my family feel special comes from the unconditional love and make it work with what you’ve got attitude that came from her. I am who I am because of her.
