%20airplane%20moments.%3C/p%3E%3Cp%3ETomorrow%20I%20get%20on%20an%20airplane%20to%20fly%20with%20my%209th%20grade%20students%20to%20Barcelona.%20They've%20been%20planning%20this%20trip%20all%20year%20long%20and%20now%20they%20get%20to%20enjoy%20the%20fruits%20of%20their%20labor.%20From%20Barcelona,%20we'll%20travel%20to%20Venice%20and%20finally%20to%20Florence%20before%20heading%20back%20home.%20Predictably,%20I'm%20spending%20my%20last%20day%20in%20North%20Carolina%20on%20high-alert%20thinking%20about%20my%20long%20airplane%20journey.%3C/p%3E%3Cp%3EBut%20tomorrow%20I%20will%20do%20what%20I've%20done%20over%20and%20over%20again%20my%20whole%20life%20(except%20that%20one%20time):%20I%20will%20walk%20into%20my%20fear%20and%20put%20myself%20in%20God's%20hands.%20It%20always%20pays%20off.%3C/p%3E%3Cp%3EWhile%20I'm%20gone,%20make%20some%20of%20these%20addictive%20cookies%20and%20follow%20my%20journey%20on%20Instagram!%3C/p%3E%3Cp%3EOne%20year%20ago:%20Chocolate%20Doughnut%20Cake%3C/p%3E%3Cp%3ETwo%20years%20ago:%20Flan%20Tres%20Leches%20Cake%3C/p%3E%3Cp%3E1%20cup%20all-purpose%20flour%20%C2%BC%20cup%20powdered%20sugar%20pinch%20of%20salt%20%C2%BD%20cup%20butter%20%C2%BD%20cup%20milk%202%C2%BD%20tablespoons%20flour%2010%20tablespoons%20granulated%20sugar%20(not%20powdered%20sugar)%201%20teaspoon%20lemon%20extract%20%C2%BD%20cup%20butter%20at%20room%20temperature%20lemon%20zest%20for%20topping%205-6%20drops%20yellow%20food%20coloring%20(optional)%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20350%20degrees%20F.%20Line%20an%208-inch%20square%20baking%20pan%20with%20a%20foil%20sling.%20Process%20the%20flour,%20powdered%20sugar,%20and%20salt%20together%20for%20a%20few%20seconds%20before%20adding%20in%20the%20chunks%20of%20cold%20butter.%20Cut%20the%20butter%20into%20the%20flour%20mixture%20with%20about%206-8%20pulses%20or%20until%20it%20looks%20like%20small%20peas.%20Press%20the%20mixture%20into%20the%20baking%20dish%20with%20the%20flat%20bottom%20of%20a%20glass%20or%20small%20dish.%20Bake%20for%2020%20minutes%20or%20until%20very%20lightly%20browning.%20Let%20cool%20completely%20on%20a%20wire%20rack.%20I%20remove%20my%20shortbread%20(using%20the%20sling)%20from%20the%20pan%20after%20about%2030%20minutes%20to%20let%20it%20cool%20the%20rest%20of%20the%20way.%20To%20make%20the%20frosting,%20heat%20the%20milk,%20flour,%20and%20granulated%20sugar%20together%20over%20medium%20heat,%20whisking%20constantly.%20Once%20it%20starts%20to%20boil,%20continue%20whisking%20and%20heating%20it%20for%20around%207%20minutes%20or%20until%20it's%20very%20thick,%20like%20cake%20batter%20consistency.%20Remove%20the%20mixture%20from%20the%20heat%20and%20add%20the%20lemon%20extract.%20Remove%20the%20mixture%20to%20a%20shallow%20pan%20and%20let%20the%20mixture%20cool%20completely%20(after%20a%20bit,%20I%20stuck%20mine%20in%20the%20fridge%20to%20hurry%20it%20along).%20Once%20the%20mixture%20is%20cool,%20beat%20the%20butter%20in%20the%20bowl%20of%20a%20stand%20mixer%20until%20soft%20and%20fluffy.%20Add%20the%20completely%20cooled%20mixture%20and%20beat%20on%20high%20until%20you%20have%20fluffy%20frosting%20the%20consistency%20of%20stiff%20whipped%20cream%20(this%20takes%20a%20few%20minutes%20%E2%80%94%20don%E2%80%99t%20worry!)%20Slice%20the%20shortbread%20into%20bars%20and%20pipe%20the%20frosting%20over%20the%20cooled%20shortbread%20bars%20and%20enjoy!%20%203.2.2925%3C/p%3E){kind=link}
