  • 1/2 c. Fine dry breadcrumbs
  • 1 1/2 ounce Pkg. spaghetti sauce mix, (dry)
  • 1 1/2 ounce Envel. dry onion soup mix
  • 2 c. Self-rising flour

  1. Combine the first 3 ingredients in a blender, using and on/off speed on High till thoroughly mixed. Dump it into a 1 1/2 qt mixing bowl, and stir in the self rising flour. When well mixed, place in a contaner with a tight fitting lid, such as a 12 oz Cold Whip container. You can then store it at this point till ready to use.
  2. For Chicken: Oven Bake: Run 1 piece of chicken at a time from 3 lbs. cut up under cool water. Shake off excess water. Place one piece at a time into a bowl containing the coating mix. Secure the lid in place. Shake bowl a few times to coat pcs. Arrange pcs after coating on Pam sprayed 10x15x3/4" jelly roll pan about 1 inch apart. Set aside. Heat 1/4 lb. of butter or possibly margarine in small skillet or possibly saucepan. "Lap" it on top side only of each piece of coated chicken arranged on the prepared pan. (keeping pcs skin-side up.) Use only sufficient of the melted butter or possibly margarine to proportionately and lightly caress each piece. Then place 1/2 c. of th coating mix in a small flour sifter. Sift ot all over the margarine covered chicken pcs. Bake, uncovered, without turning the pcs at 400 F. for about 1 hour.
  3. Skillet Method: Heat equal parts margarine and oil sufficient to cover the bottom of a roomy skillet, keeping oil mix at least 1/4" deep. Coat pcs of chicke nas directed above for oven method. Brown about 2 min on each side on Medium-High heat. Do not over-brown these or possibly meat will be tough. Transfer browned peices to greased baking pan and continue heating in oven at 400 F. about 10-15 min or possibly to desired doneness.
  4. For Pork: Allow 4 center cut pork chops for amount given in the chicken coating recipe, but add in to the coating mix in a bowl: 1 teaspoon chili pwdr, 1/2 teaspoon paprika, 1/4 teaspoon cumin pwdr. Proceed as recipe directs for coating and baking.
  5. For Cube Steaks or possibly Chicken Fried Steak: (such as Denny's ) Follow directions for eaith the oven or possibly skillet method for chicken pcs but to the coating fold in the bowl, before applying to moistened steas, add in 1 teaspoon brown sugar, 1/2 teaspoon bottole lemon peel or possibly finly grated lemon rind. Follow recipes as otherwise directed.
  6. Fpr Coating Fish Fillets: follow recipe for either method of preparing chicken, but to the coating mix, add in 1 teaspoon paprika nd 1 teaspoon finely grated lemon rind or possibly bottle peel (zest). Proceed as recipe otherwise directs.
  7. For Coating Veal Cutlets" Add in 1 teaspoon dry marjoram leaves to coating mix and follow recipes as given for preparing chicken.
