Ингредиенты

  • 9 1/3 qts sherry
  • 9 1/3 cups brown sugar
  • 6 1/4 qts water
  • 4 1/8 cups soy sauce
  • 3 1/8 cups sesame seeds
  • 2/3 cup gunger, ground
  • 12 1/2 lbs mushrooms, sliced
  • 12 1/2 cups flour
  • 2/3 cup paprika
  • 1/4 cup black pepper
  • 75 lbs turkey cutlets

Инструкции

  1. Combine fliour, paprika, and pepper for dredging mix. Dredge all cutlets.
  2. Brown off cutlets in tilt skillet. Arrange in hotel pans.
  3. Saute sliced mushrooms and scatter over cutlets in pans.
  4. Combine all sauce ingredients (first six) in sauce pot, bring to a boil. Let simmer approx. 15 minutes. Pour sauce over cutlets, cover pans tightly and finish cooking of cutlets in 300F oven fro 15-20 minutes.
  5. Garnish and serve (scallion rounds are recommended).
