- Combine fliour, paprika, and pepper for dredging mix. Dredge all cutlets.
- Brown off cutlets in tilt skillet. Arrange in hotel pans.
- Saute sliced mushrooms and scatter over cutlets in pans.
- Combine all sauce ingredients (first six) in sauce pot, bring to a boil. Let simmer approx. 15 minutes. Pour sauce over cutlets, cover pans tightly and finish cooking of cutlets in 300F oven fro 15-20 minutes.
- Garnish and serve (scallion rounds are recommended).
