Shaking Beef Stir Fry is tender beef tips sautéed with shallots and then served with a salt and pepper dipping sauce over tender arugula.
Shaking Beef Stir Fry

- FOR THE BEEF
- 1 pound beef tenderloin tips, fat trimmed and cut into bite size pieces
- 1 teaspoon ground black pepper
- ½ cup plus 1 tablespoon canola oil
- 1 shallot, thinly sliced
- 3 stalks green onion, trimmed and cut to 1-inch lengths
- 1 clove garlic, minced
- 2 tablespoons unsalted butter
- STIR-FRY-SAUCE
- 2 Tablespoons white vinegar
- 2 Tablespoons white granulated sugar
- 1?8 cup light soy sauce
- ⅛ cup sweet soy sauce
- 1?4 cup fish sauce
- 1 teaspoon Miran
- SALT AND PEPPER DIPPING SAUCE
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1?4 cup of freshly squeezed lime juice
- 1 bunch Arugula
Marinate meat ½ teaspoon black pepper and 1 tablespoon oil for about 2 hours.
Meanwhile, make the stir-fry sauce by combining the white vinegar, sugar, soys, fish sauce, and Mirin. Mix until sugar is dissolved. Set aside.
Heat 1?4 cup of oil in wok or large sauté pan over maximum heat. (Don’t overload the pan, or the meat will not brown properly.
When the oil begins to smoke, add the meat in one layer. Let a brown crust form, and turn to brown the other side. Browning should take 3-4 minutes.
Add the shallots, scallions, and garlic to the pan. Shake or stir ingredients in the pan for about 30 seconds.
Add stir-fry sauce. Continue to shake or stir ingredients.
Add butter, and continue to cook and shake pan until butter melts.
Remove from heat.
Make lime dipping sauce by mixing together salt and pepper in a ramekin. Pour lime juice over salt pepper mixture.
True story. Every evening the hubby gives me a call on this way home from work. The regular, yada yada yada goes on, but right before he gets ready to hang up, he asks me what I made for dinner. Sometimes I have to tell him the truth. Honey, I made something that I am sure you won’t like, so you are on your own tonight. But this time I tell him. ”Shaking Beef”. His response was Shaking what? That sounds Asian or something! I tell him that it’s Asian, Vietnamese to be exact. But I emphasize to him that I am sure he is going to like it.
I was 100% right. He had seconds and thirds. I wanted seconds, but better for him to over indulge than me. So I tell him to finish up the rest. I did that and probably would have licked the plate too.
The salt and pepper lime dipping sauce was surprisingly delicious.
I was in a rush to get the food on the table and unfortunately, my photos are lacking. But I told the hubby that I will have to make this again soon just to get better photos. He was not complaining in the least.
