- 1 cup packed light brown sugar
- 1/2 cup unsweetened cocoa powder (I used natural, the recipe did not specify)
- 2 eggs
- 1 t vanilla
- approx. 7 oz of chocolate bars broken into chunks, 1/2 espresso flavored and 1/2 mint flavored

,%20probably%20because%20as%20a%20second%20kid%20it%20was%20inevitable%20it%20should%20happen%20a%20lot,%20but%20Alex%20is%20pretty%20sensitive%20to%20being%20left%20out%20of%20things.%20%20I%20envision%20some%20tough%20lessons%20this%20year,%20as%20activities%20I%20normally%20would%20have%20waited%20for%20the%20afternoon%20for%20the%203%20of%20us%20to%20do%20together%E2%80%93fountains,%20swimming%20pool,%20shopping%20trips,%20baking%E2%80%93happen%20just%20with%20Sammy%20while%20Alex%20is%20at%20school.%20%20It%E2%80%99s%20good%20for%20Alex%20to%20know%20that%20she%20cannot%20do%20everything,%20but%20it%20still%20makes%20me%20a%20little%20sad%20for%20her.%3C/p%3E%3Cp%3EThese%20brownies%20were%20a%20big%20hit%20at%20John%E2%80%99s%20work.%20%20The%20mint%20and%20espresso%20was%20subtle,%20enough%20that%20most%20people%20could%20tell%20there%20were%20a%20lot%20of%20chocolate%20chunks%20in%20the%20brownies,%20but%20I%20am%20not%20sure%20everyone%20knew%20exactly%20what%20flavors%20were%20there.%20%20I%20think%20more%20people%20guessed%20mint%20than%20espresso.%20%20The%20brownies%20did%20not%20slice%20that%20nicely%20so%20it%20is%20a%20toss%20up%20as%20to%20whether%20I%20would%20bother%20specifically%20with%20the%20Sesame%20Street%20recipe%20again,%20versus%20just%20chopping%20those%20same%20chocolate%20bars%20into%20a%20different%20cocoa%20powder%20brownie%20(another%20possibility%20is%20that%20the%20recipe%20needed%20Dutched%20cocoa%20powder%E2%80%93it%20did%20not%20specify%20so%20I%20had%20to%20guess).%20What%20is%20not%20a%20toss%20up%20is%20that%20I%20would%20chop%20those%20same%20flavored%20chocolate%20bars%20again%20and%20put%20them%20into%20brownies%E2%80%93I%20loved%20the%20flavor.%20%20The%20baking%20soda%20is%20unusual%20in%20brownies%E2%80%93I%20suspected%20that%20maybe%20it%20was%20in%20there%20because%20of%20the%20whole%20wheat%20flour%20used.%3C/p%3E%3Cp%3ESesame%20Street%20Whole%20Wheat%20Brownies%20With%20a%20Minty%20Mocha%20Twist%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Sesame%20Street%20Yummy%20Cookies%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350F.%20Line%20an%208%20inch%20square%20baking%20pan%20with%20parchment%20paper%20that%20hangs%20over%20the%20edges.%20Set%20aside.%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20a%20small-medium%20saucepan%20over%20low%20heat.%20Add%20the%20sugar%20and%20stir%20for%204%20minutes%20or%20until%20the%20mixture%20is%20smooth%20and%20the%20sugar%20is%20dissolved.%20Remove%20from%20the%20pan%20and%20pour%20into%20a%20mixing%20bowl,%20scraping%20to%20remove%20everything.%3C/p%3E%3Cp%3EAdd%20the%20cocoa%20powder%20and%20whisk%20smooth.%20Beat%20in%20the%20eggs%20and%20vanilla%20with%20a%20wooden%20spoon%20or%20spatula%20until%20completely%20blended.%3C/p%3E%3Cp%3EStir%20in%20the%20flour%20until%20completely%20blended%20but%20do%20not%20over-stir.%20Fold%20in%20the%20chocolate%20chunks.%20Scrape%20the%20batter%20into%20the%20prepared%20baking%20pan%20and%20smooth%20the%20top%20evenly.%3C/p%3E%3Cp%3EBake%20for%2016-20%20minutes,%20or%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20pan%20comes%20out%20mostly%20clean.%20%20Let%20cool%20completely%20before%20removing%20the%20brownies%20from%20the%20pan%20(use%20the%20parchment%20overhang)%20and%20slicing.%3C/p%3E){kind=link}
