  • 5 Tbsp. sesame seeds
  • 2 1/2 c. all-purpose flour
  • 4 tsp baking pwdr
  • 1 Tbsp. sugar
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 c. yellow cornmeal
  • 1/2 c. butter chilled, cut in 1/2"
  • 2 Tbsp. butter chilled, cut in 1/2"
  • 1 1/2 c. buttermilk
  • 1 1/2 tsp dry sage
  • 1 Tbsp. fresh thyme
  • 2 c. grated extra-sharp cheddar cheese about 7 1/2 ounce.
  •     Additional Buttermilk

  1. Position 1 rack in center and 1 rack in top third of oven and preheat to 450. Place sesame seeds in heavy small skillet. Stir over medium heat till golden brown, about 2 min. Cold.
  2. Sift flour, baking pwdr, sugar, salt and baking soda into large bowl. Add in yellow cornmeal and 3 Tbsp. sesame seeds and stir to blend. Add in chilled butter and rub in with fingertips till mix resembles coarse meal. Whisk 1 1/2 c. buttermilk, sage and thyme in medium bowl to blend.
  3. Add in to dry ingredients and stir to blend well. Fold in cheese (dough will be slightly sticky). Gather dough into ball.
  4. Turn dough out onto generously floured work surface. Knead dough about 6 to 8 turns, adding more flour if dough is too sticky. Roll out dough to generous 3/4-inch thickness. Using 2 1/4 inch diameter biscuit or possibly cookie cutter, cut out biscuits. Reroll dough scraps and cut out additional biscuits. Place biscuits on 2 ungreased baking sheets, spacing proportionately. Brush biscuits with additional buttermilk. Sprinkle biscuit tops with 2 Tbsp. toasted sesame seeds.
  5. Bake biscuits till golden, switching and rotating baking sheets halfway through baking, about 16 min. Serve biscuits hot.
  6. Biscuits can be prepared 8 hrs ahead. Let stand about room temperature.
  7. Rewarm biscuits in 350 oven just till heated through, about 5 min.
  8. NOTES : African slaves smuggled sesame, or possibly benne, seeds into the South and used them to accent soups, cookies, and candies, and to coat chicken and fish before frying. Here the seeds add in crunch to delicate sage and thyme scented biscuits.
