- Cake:
- 1 1/2 cups (180 grams) all purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 1 1/2 cups (300 grams) granulated sugar
- 3 large eggs, room temperature
- 1/4 cup fresh lemon juice (just of 2 lemons)
- zest of one lemon (about 1 tablespoon)
- 1/2 cup (120 grams) light sour cream
- Blueberry Compote:
- 7 ounces blueberries (about 1 ½ cups) (I used frozen, thawed)
- 3 tablespoons granulated sugar
- ½ teaspoon lemon juice
- 2 ⅛ teaspoons cornstarch (¼ oz.)
- zest of 1/2 lemon

%3C/p%3E%3Cp%3Eand%20each%20member%20can%20peruse%20their%20assigned%20blog%20to%20find%20something%20that%20they%3C/p%3E%3Cp%3Ewould%20like%20to%20make,%20or%20several%20things%20to%20make%20in%20the%20future.%20The%20assigned%20blogs%3C/p%3E%3Cp%3Eare%20kept%20completely%20secret%20until%20the%20reveal%20day%20and%20time,%20then%20you%20get%20to%20see%3C/p%3E%3Cp%3Ewho%20had%20your%20blog,%20and%20you%20get%20to%20post%20about%20what%20you%20made%20from%20your%20assigned%3C/p%3E%3Cp%3Eblog.%20It's%20a%20lot%20of%20fun,%20and%20a%20great%20way%20to%20discover%20new%20blogs%20and%3C/p%3E%3Cp%3Erecipes.%3C/p%3E%3Cp%3EThis%20month%20I%20was%20assigned%20to%20Baking%20and%20Boys!%20I%20am%20so%20excited%20that%20I%20was%20assigned%20to%20Katrina's%20blog.%20I've%20been%20following%20her%20ever%20since%20I%20first%20discovered%20her%20blog%20through%20the%20Secret%20Recipe%20Club.%20She%20has%20four%20boys%20(not%20including%20her%20husband)%20to%20keep%20up%20with%20and%20that%20is%20amazing%20to%20me!%20I%20only%20have%20one%20son%20(and%20one%20daughter)%20and%20can%20hardly%20keep%20up%20with%20them.%20Her%20blog%20chronicles%20exciting%20times%20with%20her%20family%20and%20delicious%20recipes.%3C/p%3E%3Cp%3EI%20was%20all%20over%20her%20site%20trying%20to%20decide%20what%20to%20make.%20My%20top%20two%20were%20the%20Tuxedo%20Cake%20and%20the%20Lemon%20Sour%20Cream%20Pound%20Cake%20with%20Blueberry%20Compote.%20I%20still%20may%20make%20the%20Tuxedo%20Cake%20one%20day.%20There%20are%20so%20many%20delicious%20recipes%20that%20may%20be%20in%20my%20future,%20like%20the%20orange%20rolls%20filled%20with%20chocolate,%20raspberry%20streusel%20dessert%20bars,%20and%20peanut%20butter%20dream%20cheesecake%20cups!%20I%20look%20forward%20to%20trying%20all%20of%20those!%3C/p%3E%3Cp%3EFor%20now,%20I%20am%20in%20love%20with%20this%20pound%20cake%20recipe%20and%20can%20hardly%20wait%20to%20make%20it%20again!%20I%20followed%20the%20pound%20cake%20recipe%20exactly,%20but%20only%20made%20a%20half%20batch%20(the%20half%20recipe%20is%20below)%20of%20the%20blueberry%20compote.%20I%20used%20Trader%20Joe's%20frozen%20wild%20Maine%20blueberries%20and%20they%20worked%20perfectly.%20The%20wild%20Maine%20blueberries%20are%20smaller%20than%20traditional%20blueberries%20and%20they%20worked%20so%20well%20in%20this%20recipe.%20I%20hope%20you%20love%20this%20as%20much%20as%20I%20did!%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20325%20degrees%20F.%20%20Spray%20a%209%E2%80%9Dx5%E2%80%9D%20pan%20with%20non-stick%20spray.%3C/p%3E%3Cp%3E2.%20In%20a%20medium%20bowl,%20whisk%20together%20the%20flour,%20baking%20soda%20and%20salt%20then%20set%20aside.%3C/p%3E%3Cp%3E3.%20Using%20a%20mixer,%20beat%20the%20butter%20until%20fluffy%20then%20add%20the%20sugar%20%C2%BC%20cup%20at%20a%20time%20and%20beat%20for%205%20minutes.%20%20Add%20the%20eggs%20one%20at%20a%20time%20until%20each%20is%20combined,%20scraping%20between%20additions.%20%20Beat%20in%20lemon%20juice%20and%20zest.%20%20Stir%20the%20dry%20ingredients%20into%20the%20wet%20ingredients.%3C/p%3E%3Cp%3E4.%20Add%20the%20sour%20cream%20and%20fold%20it%20into%20the%20batter%20until%20blended%20with%20no%20streaks.%20%20Spread%20the%20batter%20evenly%20in%20the%20pan.%3C/p%3E%3Cp%3E5.%20Bake%20for%20about%2050-55%20minutes%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%20%20Let%20the%20cake%20cool%20in%20the%20pan%20on%20a%20wire%20rack%20for%2015%20minutes.%20%20Run%20a%20butter%20knife%20around%20the%20edges%20of%20the%20pan%20to%20release%20the%20cake%20and%20remove%20it.%20%20Cool%20it%20completely%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3E6.%20Combine%20the%20blueberries%20with%20the%20sugar%20and%20lemon%20juice%20and%20let%20sit%20for%2030%20minutes.%20%20Pour%20the%20the%20berries%20and%20any%20liquid%20into%20a%20saucepan.%20%20Dissolve%20the%20cornstarch%20in%20a%20small%20amount%20of%20water%20(about%202-3%20teaspoons)%20and%20add%20to%20the%20berries%20with%20the%20zest.%20%20Bring%20to%20a%20boil,%20while%20stirring%20gently.%20%20Let%20the%20mixture%20boil%20until%20the%20juices%20are%20clear%20and%20very%20thick%E2%80%94about%2030%20to%2060%20seconds.%20%20Empty%20into%20a%20bowl%20and%20cool%20to%20room%20temperature%20without%20stirring.%20%20Chill.%20%20Makes%20a%20generous%202%20cups.%3C/p%3E%3Cp%3E7.%20Serve%20the%20pound%20cake%20sprinkled%20with%20powdered%20sugar%20(if%20desired),%20and%20topped%20with%20blueberry%20compote.%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20Baking%20and%20Boys!%3C/p%3E%3Cp%3EDon't%20forget%20to%20follow%20me%20on%20Blog%20Lovin'%20or%20using%20one%20of%3C/p%3E%3Cp%3Ethe%20buttons%20at%20the%20top%20of%20the%20page%20so%20you%20don't%20miss%20a%20recipe!%3C/p%3E){kind=link}
