One of my very favorite fruits is lime. I know a lime seems

like an odd fruit to love but I love the smell, how juicy it is, and I love how

it freshens up anything and everything. Once again it’s Secret Recipe Club Reveal

day and my reveal has everything to do with fruit, but not just lime!!!

I was given quite an enlightening blog called Enriching your Kids! Shirley

puts a lot of thought in providing her readers with recipe that are healthy and

delicious at the same time. Yes it can be done! When I saw Shirley’s recipe for

Pineapple

Jam I knew I had found my recipe. Anything pineapple has to be for me!

Opps but then I had a problem… a dilemma…. A decision to

make! I found my favorite veggie hiding on Shirley’s blog! Okra… Bhindi

Bajis! Oh how I love it! I get it all the time at my favorite Indian

restaurant! Sigh but alas nothing fried is on my diet! Then I found my ultimate

diet cheat! Yes I can have this wahoo!

Apple sauce! Yes, Apple

Sauce! Since I am trying terribly hard to watch what I am eating I knew I had

found a winner because this was not just any applesauce ... nope … this is Ginger-Apple Sauce and it has lime in it… I love limes!!! I put limes in everything!

Oh boy was it a winner! There are so many things to love

about this recipe. I love that it’s all homemade, and all natural! It’s easy to

make organic, because you can find all of these ingredients organic. Everything

in this recipe is low calorie and bursting with flavor. I love that it puts a

new spin on an old favorite. Sometimes you just get tired of the same thing…

why not make the same thing even better or the same old recipe a new recipe?

I could go on and on about this recipe because it’s just

that good! I hope you will give it a try and let me know what you think! We are

in love with it and have already made three more batches! It would go great in

any child’s lunch. It’s almost time to go back to school. Why not make your child’s

lunch healthy and delicious?

Ingredients:

Peel, core and roughly chop apples.

Peel the ginger, crush in a mortar and extract the juice (Or

use dry). Peel the cardamom and crush (or use dry).

Place the chopped apples in a microwave dish and microwave

for 3-4 minutes till softened.

Blend the softened apples in a blender.

Add the ginger juice and cook the mixture for 7-8 minutes

till it is thickened and translucent. Stir to prevent scorching.

Stir in the lemon juice and crushed cardamom. Add honey

enough to sweeten.
