- Combine butter and flour in a saucepan, making a roux. Cook for two minutes stirring frequently.
- Add leeks, onions, celery, carrots, and garlic; continue to cook stirring frequently for an additional two minutes.
- Slowly pour in milk and bring mixture to a boil, then reduce to a simmer.
- Add sherry, paprika, dill, ketchup, Worchestershire sauce and salt to taste.
- Add seafood to the mixture and heat thoroughly.
