- Combine gelatin, 1/2 c. sugar and salt. Stir together egg yolks, lime juice and water. Add in to gelatin mix. Cook and stir over medium heat just till mix comes to a boil. Remove from heat. Add in lime peel and food coloring. Chill, stirring occasionally till mix mounds. Beat egg whites to soft peaks, gradually add in 1/2 c. sugar; beat to stiff peaks. Mix in gelatin mix. Mix in whipped cream and cantaloupe. Pour into cooled pie shell. Refrigeratetill hard. Top with a wreath of additional whipped cream and toasted coconut.
