great shortbread recipe and I love the dogs who really seem to be enjoying the weather in true doggy fashon
%20and%20I%20wanted%20to%20take%20some%20food.%20First%20we%20are%20staying%20with%20my%20Great%20Aunt%20Blanche%20in%20Wheeling%20and%20then%20we%20are%20headed%20on%20to%20John%E2%80%99s%20aunt%20and%20uncle%E2%80%99s%20place%20in%20Pittsburgh.%20Because%20it%20will%20involve%20more%20than%20one%20day%20of%20traveling%20with%20the%20food,%20I%20needed%20something%20that%20would%20keep%20well.%20And%20also%20something%20that%20would%20not%20seem%20too%20weird%20to%20leave%20with%20a%20widowed%20older%20lady%20living%20alone,%20albeit%20one%20with%20a%20sweet%20tooth%E2%80%93in%20which%20case%20an%20entire%20bundt%20cake%20just%20seemed%20odd%20to%20me.%20So%20I%20thought%20cookies%E2%80%93the%20sandy%20textured,%20crumbly,%20last%20forever%20kind.%20Also,%20much%20like%20that%20Double%20Chocolate%20Peppermint%20Chocolate%20Chip%20Bundt%20Cake%20that%20I%20*had*%20to%20make%20after%20not%20being%20able%20to%20over%20the%20holidays,%20I%20have%20not%20been%20able%20to%20get%20shortbread%20off%20my%20mind.%20I%20always%20make%20Scottish%20shortbread%20at%20Christmas%20and%20this%20year,%20like%20many%20other%20dishes,%20I%20was%20unable%20to.%20So%20shortbread%20it%20was.%20On%20a%20whim%20I%20included%20a%20citrus%20variation,%20see%20below,%20and%20a%20chocolate%20sable,%20which%20I%20will%20share%20later.%3C/p%3E%3Cp%3EBut%20first%20I%20have%20some%20pictures%20to%20share.%20Can%20you%20guess%20where%20we%20are?%3C/p%3E%3Cp%3EOur%20backyard!!!%20The%20weather%20has%20gotten%20warmer,%20the%20mud%20has%20dried%20up%20(actually%20it%20is%20muddy%20again%20already%E2%80%93but%20as%20of%20last%20weekend%20it%20was%20dry),%20allowing%20easy%20access%20to%20the%20entire%20yard.%20And%20so%20we%20finally%20went%20exploring.%20We%20crossed%20the%20creek,%20we%20have%20no%20idea%20where%20our%20property%20ends,%20the%20dogs%20found%20a%20swimming%20hole,%20the%20kids%20and%20I%20found%20a%20baby%20frog%20(!!)%20and%20the%20girls%20sat%20near%20the%20creekbed%20and%20got%20muddy%20playing%20with%20rocks%20for%20what%20felt%20like%20forever.%20Oh%20yeah,%20and%20we%20got%20lost%20and%20came%20up%20out%20of%20the%20creek%20in%20someone%20else%E2%80%99s%20backyard.%20That%20was%20a%20tad%20embarrassing,%20but%20I%20know%20why%20it%20happened%20now%20so%20it%20should%20not%20happen%20again%E2%80%93the%20creek%20winds%20a%20lot%20and%20I%20forgot%20to%20take%20this%20into%20account%20when%20heading%20out%20at%20a%20%E2%80%9Cstraight%E2%80%9D%20perpendicular%20angle%20from%20it.%3C/p%3E%3Cp%3EThe%20creek%20that%20cuts%20through%20our%20property%20cuts%20a%20deep%20but%20narrow%20valley%20between%202%20hills%E2%80%93this%20is%20standing%20high%20on%20the%20hill%20on%20the%20other%20side%20of%20the%20creek%20(still%20our%20property)%20looking%20over%20the%20back%20part%20of%20our%20backyard%E2%80%93that%20fence%20is%20the%20boundary%20between%20our%20yard%20and%20the%20field%20behind%20us%20(where%20cows%20sometimes%20are,%20much%20to%20the%20kids%E2%80%99%20delight).%3C/p%3E%3Cp%3EOK%20now%20that%20I%20have%20shared%20my%20joy,%20let%20me%20tell%20you%20a%20bit%20about%20this%20shortbread.%3C/p%3E%3Cp%3EIn%20a%20word,%20it%E2%80%99s%20fantastic.%20The%20real%20deal%E2%80%93or%20at%20least%20as%20far%20as%20I%20know,%20not%20being%20Scottish%20nor%20having%20a%20family%20tradition%20of%20shortbread.%20It%20is%20a%20Carole%20Walter%20recipe%20and%20others%20I%20have%20tried%20have%20not%20come%20close.%20It%20is%20a%20little%20fussy%20with%20repeated%20bakings%20and%20it%20is%20messy,%20but%20it%20is%20not%20difficult%20and%20the%20end%20result%20is%20so%20worth%20it.%20At%20Christmastime,%20the%20kids%20and%20I%20use%20red%20and%20green%20sanding%20sugar%20on%20it%E2%80%93in%20honor%20of%20spring,%20we%20used%20an%20icy%20springtime%20blue%20this%20time%20(and%20peach%20on%20the%20orange%20variation).%3C/p%3E%3Cp%3EScottish%20Shortbread%3C/p%3E%3Cp%3EAdapted%20from%20Carole%20Walter%E2%80%99s%20Great%20Cookies%3C/p%3E%3Cp%3EPosition%20the%20baking%20shelf%20in%20the%20middle%20rack%20and%20preheat%20the%20oven%20to%20300%20F.%20Line%20a%209%20inch%20square%20baking%20pan%20with%20foil.%3C/p%3E%3Cp%3ESift%20the%20flour,%20rice%20flour%20and%20salt%203%20times%20(I%20use%20a%20sieve%20and%20go%20back%20and%20forth%20between%202%20large%20bowls).%20Set%20aside.%3C/p%3E%3Cp%3ECream%20the%20butter%20on%20medium%20low%20speed%20until%20smooth%20and%20creamy,%20about%201%20minute.%20Add%20the%20sugar%20gradually,%20taking%20about%201%20minute.%20Scrape%20the%20sides%20down%20as%20needed%20and%20mix%20until%20it%20is%20completely%20blended%20and%20creamy.%3C/p%3E%3Cp%3EOn%20low%20speed%20add%20half%20of%20the%20flour%20mixture%20and%20mix%20just%20until%20there%20is%20no%20dry%20flour%20visible.%20It%20may%20look%20a%20little%20crumbly%20at%20this%20point.%20Clean%20and%20dry%20a%20work%20surface.%20Dump%20some%20of%20the%20flour%20mixture%20onto%20the%20surface%20and%20dump%20the%20mixed%20dough%20on%20top%20of%20that.%20Working%20in%20batches%20and%20using%20your%20hands,%20gradually%20mix%20in%20all%20of%20the%20flour,%20kneading%20it%20JUST%20until%20it%20is%20smooth%E2%80%93do%20not%20overwork,%20but%20the%20dough%20should%20come%20together%20and%20knead.%20It%20reminds%20me%20of%20scone%20dough.%3C/p%3E%3Cp%3EPress%20the%20dough%20evenly%20into%20the%20bottom%20of%20the%20prepared%20pan,%20making%20sure%20that%20it%20is%20pressed%20into%20the%20corners.%20Test%20for%20evenness%20by%20inserting%20a%20toothpick%20at%20several%20points.%20Prick%20the%20dough%20evenly%20all%20over%20with%20a%20fork%20(not%20strictly%20necessary%20but%20it%20looks%20traditional%E2%80%93I%20did%20not%20for%20the%20citrus%20dough%20in%20the%20fancy%20pan).%3C/p%3E%3Cp%3EBake%20the%20shortbread%20for%2050-60%20minutes,%20until%20the%20top%20feels%20set.%20Remove%20the%20pan%20and%20let%20it%20sit%20for%205%20minutes.%3C/p%3E%3Cp%3EUsing%20a%20ruler%20(ha!)%20and%20a%20pastry%20scraper,%20cut%20straight%20down%20through%20the%20dough%20in%20a%20grid%20pattern.%20Sprinkle%20with%20sanding%20sugar%20and%20return%20to%20the%20oven%20for%2010%20more%20minutes%20or%20until%20lightly%20browned.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20let%20stand%20for%2010%20minutes.%20Then%20gently%20and%20carefully%20lift%20the%20ends%20of%20the%20foil*%20to%20transfer%20the%20shortbread%20to%20a%20cookie%20sheet.%20There,%20you%20want%20to%20gently%20pull%20the%20cookies%20apart%20so%20that%20they%20each%20have%20space%20around%20them.%20Return%20to%20the%20oven%20for%2010%20minutes%20to%20dry%20the%20cookies%20out.%20Remove%20and%20let%20cool%20on%20the%20pan%20on%20a%20cooling%20rack.%3C/p%3E%3Cp%3E*If%20you%20are%20using%20a%20pan%20like%20the%20shortbread%20pan,%20very%20carefully%20and%20gently%20invert%20the%20pan%20over%20the%20cookie%20sheet.%20You%20may%20need%20to%20tap%20gently%20to%20get%20the%20cookies%20to%20release%20onto%20the%20pan.%20Then%20separate%20the%20cookies%20and%20proceed%20with%20the%20recipe%20as%20written.%3C/p%3E){kind=link}
