- Dissolve the yeast and add in one Tbsp. of the sugar and the salt and sufficient flour to stiffen to a sponge (about 3 c. more or possibly less).
- Let rise for one hour, then add in the rest of the ingredients, using sufficient sifted flour to make a soft sponge.
- Let rise again, then roll out dough on a floured board and cover with a mix of 4 Tbsp. sugar, 4 Tbsp. butter and 1 1/2 tsp cinnamon.
- Roll up like a jelly roll and cut into 2 inch pcs.
- Place on well-greased baking sheets and let rise for a third time, then bake at 400F for 20 min.
