The end of our Spring Break vacation has come to an end. The week went by, far too fast, but at least Craig and I are feeling rested. We spent most of the week running around for estimates on some home improvements we'd like to do. We enjoyed a few leisurely lunches in Carmel, after enjoying the luxury of sleeping in past 5:00am. Life is good, and we are thankful to both have jobs to return to in the morning.
Easter is a time for us to reflect on the true meaning it holds for us, as church-going Christians should. I consider this to be as important a holiday as I do Christmas-- if not a bit more. .%20In%20fact,%20I%20had%20%22zero%22%20comments,%20and%20that%20doesn't%20surprise%20me.%20%20I%20found%20the%20recipe%20in%20Bon%20App%C3%A9tit,%20in%20the%20same%20year.%20%20It%20was%20a%20good%20one,%20so%20I%20decided%20to%20make%20it%20again%20and%20take%20better%20pictures.%20%20The%20recipe%20begins%20with%20Yukon%20Gold%20potatoes%20and%20Sweet%20Potatoes,%20sliced%20very%20thin%20and%20placed%20in%20water.%20(My%20mandoline%20made%20this%20very%20easy%20to%20do.)%20%20I%20didn't%20peel%20the%20Yukon%20Gold's,%20but%20I%20washed%20them%20really%20well.%3C/p%3E%3Cp%3ESpring%20has%20brought%20my%20herb%20garden%20back%20to%20life--%20%20and%20I%20appreciate%20that%20I%20had%20all%20%20four%20types%20%20herbs%20for%20this%20recipe.%20%20Parsley,%20Sage,%20Rosemary%20&%20Thyme%20(humming%20Simon%20&%20Garfunkel).%20%20Dried%20herbs%20won't%20cut%20it,%20so%20go%20for%20fresh!%3C/p%3E%3Cp%3EYou'll%20need%20about%205%20ounces%20of%20Gruyere%20Cheese.%20%20It's%20a%20bit%20pricey%20(about%20$15.00%20a%20pound),%20but%20it's%20so%20worth%20it.%3C/p%3E%3Cp%3EThe%20prep%20work%20takes%20about%2015-20%20minutes.%20%20Of%20course,%20a%20food%20processor%20(and%20mandoline)%20makes%20this%20go%20faster.%20%20Grate%20the%20cheese--%20should%20be%20about%201-1/4%20cup.%3C/p%3E%3Cp%3EChop%20your%20fresh%20herbs--%20about%201%20Tablespoon%20of%20each.%3C/p%3E%3Cp%3EDrain%20the%20potatoes,%20and%20blot%20them%20dry%20with%20a%20paper%20towel.%20%20In%20one%20bowl,%20mix%20about%201-1/2%20tsp.%20sea%20salt%20and%203/4%20tsp.%20coarse%20black%20pepper.%20%20Combine%20your%20herbs%20in%20another%20bowl.%3C/p%3E%3Cp%3EThe%20fat%20gram%20police%20are%20here,%20but%20ignore%20them.%20In%20a%20sauce%20pan,%20pour%20in%20two%20cups%20of%20heavy%20cream.%20Don't%20switch%20to%20milk,%20reduced%20milk%20or%20skim%20milk.%20%20There%20are%20times%20to%20just%20savor%20the%20creaminess%20of%20a%20dish,%20and%20this%20is%20one%20of%20them.%20%20Add%201/2%20stick%20of%20butter,%202%20minced%20garlic%20cloves%20and%20bring%20to%20a%20simmer;%20remove%20from%20heat.%3C/p%3E%3Cp%3EButter%20a%2013%C3%979%C3%972-inch%20glass%20baking%20dish.%20%20However,%20I%20cut%20the%20recipe%20back%20a%20bit,%20so%20I%20used%20a%20smaller%20casserole%20dish,%20and%20less%20potatoes.%20I%20still%20made%20the%20same%20amount%20of%20cream--%20as%20I'd%20rather%20have%20too%20much%20than%20not%20enough.%20%20Layer%20half%20the%20potatoes,%20evenly%20in%20the%20dish.%20%20Sprinkle%20half%20the%20salt%20&%20pepper,%20and%20half%20the%20herbs.%3C/p%3E%3Cp%3EEvenly%20sprinkle%20half%20the%20grated%20cheese.%20Repeat%20with%20one%20more%20layer.%3C/p%3E%3Cp%3EPour%20cream%20mixture%20over%20gratin,%20pressing%20lightly%20to%20submerge%20potato%20mixture%20as%20much%20as%20possible.%3C/p%3E%3Cp%3ENOTE:%20I%20didn't%20add%20all%20of%20the%20creme,%20because%20I%20made%20a%20note%20that%20by%20submerging%20the%20potatoes%20(the%20first%20time%20I%20made%20this)%20it%20was%20too%20much.%20%20I%20filled%20the%20dish%20just%20to%20the%20top%20of%20the%20potatoes..%3C/p%3E%3Cp%3EDO%20AHEAD:%20Can%20be%20made%206%20hours%20ahead.%20Cover%20with%20plastic%20wrap%20and%20chill.Remove%20plastic%20wrap%20before%20baking.%3C/p%3E%3Cp%3ECover%20with%20foil%20and%20bake%20at%20400F%20in%20a%20preheated%20oven%20for%20about%2030%20minutes;%20remove%20the%20foil,%20then%20bake%20for%20about%2025%20more%20minutes.%20%20NOTE:%20You%20could%20make%20individual%20ramekins,%20though%20I'm%20not%20sure%20what%20the%20total%20baking%20time%20would%20be.%3C/p%3E%3Cp%3EWow!%20%20I%20will%20tell%20you%20that%20I%20saw%20a%20lot%20of%20oil/fat%20on%20the%20surface.%20I'm%20not%20sure%20why,%20but%20I'm%20guessing%20from%20the%20cheese?%20%20I%20carefully%20tipped%20the%20dish%20over%20the%20kitchen%20sink,%20pressed%20with%20a%20spatula%20(so%20it%20wouldn't%20slip%20into%20the%20sink)%20and%20drained%20it.%3C/p%3E%3Cp%3EMuch%20better!%3C/p%3E%3Cp%3EThis%20side%20dish%20was%20the%20hit%20of%20the%20Easter%20menu.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Yukon%20Gold%20Potatoes,%20Sweet%20Potatoes,%20Heavy%20Cream,%20Butter%20and%20Cheese.%20%20Do%20I%20really%20need%20to%20describe%20how%20good%20this%20is?%20%20The%20herbs%20are%20what%20takes%20this%20to%20a%20new%20level.%20%20There%20were%20no%20leftovers.%20%20People%20went%20back%20for%20seconds.%20'Nuff%20said.%3C/p%3E){kind=link}
