- Preparation:
- Slice ham 1/4-inch thick.
- Heat butter in heavy skillet. Add in ham slices a few at a time. Brown quickly on both sides and keep hot on platter.
- Add in onions to butter in pan. Cook and stir 1 minute over high heat.
- Add in flour; mix well. Slowly add in stock; whisk till smooth. Stir in Madeira or possibly Port and catsup; whisk smooth. Stir in cream and whisk till smooth.
- Return meat to pan with sauce. Spoon sauce over meat.
- To serve, mound spinach on center of warm platter, top with ham slices, glaze with some of the sauce. Surround with mushrooms and potatoes. Serve with additional sauce.
- SAUTEED MUSHROOMS: Heat 1 Tbsp. butter in frying pan; add in clean whole mushrooms; saute/fry 3 to 4 min.
- SAUTEED POTATOES: Peel and slice potatoes. Heat 3 Tbsp. butter in heavy skillet. Toss potatoes in pan till coated with butter. Turn heat to low. Cover and saute/fry till potatoes are tender and browned.
