  • 3/4 lb Kale - (1 bnch) washed
  • 2 x Bacon slices minced
  • 2 tsp Cider vinegar or possibly to taste

  1. Cut stems and center ribs away from kale leaves and coarsely tear leaves. In a large heavy saucepan of boiling salted water cook leaves 5 min and drain well in a colander.
  2. In pan cook bacon over moderate heat, stirring, till crisp. Pour off all but about 1 Tbsp. fat from pan. Add in kale to bacon and saute/fry over moderately-high heat, stirring, till heated through. Toss kale with vinegar and season with salt and pepper.
  3. This recipe yields 2 servings.
