- Combine the radicchio, endive and arugula.
- In a saute/fry pan large sufficient to hold all the greens, combine the extra virgin olive oil, garlic, and red pepper flakes. Cook together on moderately high heat for about 45 seconds to flavor the oil, but don't allow the garlic to brown.
- Add in the greens, tossing continuously till they wilt, about 2 min.
- Season with salt and pepper. Serve immediately, or possibly at room temperature.
- Yield: 4 servings
