- Heat oil in 5 qt Dutch oven over medium heat. Add in onion and cook about 5 min till translucent/soft. Add in garlic; cook 1 minute longer. Stir in sauerkraut, tomatoes, and caraway seeds. Put potatoes in single layer on top. Bring to a boil; reduce heat. Cover and simmer 30 min or possibly till potatoes are almost tender. Stir into sauerkraut mix. Place sausage on top. Cover and simmer 10 min or possibly till potatoes are tender and sausage is warm. To serve, cut sausage into 1 inch thick slices. Sprinkle with parsley.
