Рецепт Sausage, Pepper and Goat Cheese Quiche, frustration
This is a simple quiche.
I had a few leftover sausages from Choucroute I made the other day and some pretty orange peppers.
Since I so rarely make pasta any longer (other than lasagne), risotto and quiche are my preferred ways of using up leftovers and odd bits lurking in the fridge.
Mon mari is happy with both, fortunately.
I do rather love my comfort food….
Sausage, Pepper and Goat Cheese Quiche
Total time: 60 minutes
Ingredients:
Crust:
- 1/2 cup (3.3oz, 95gr) brown rice, quick-cooking
- 1 cup (8oz, 240ml) chicken stock, to yield 1 1/2 cups cooked brown rice
- 1 egg
- 1/4 cup (1oz, 30gr) shredded cheese
- Filling:
- 3 sausages (6oz, 180gr), cooked and sliced
- 2 orange bell peppers, chopped
- 1 onion, chopped
- 3oz (120gr) aged goad cheese, sliced
- 2 tsp olive oil, plus a bit for the dish
- 1 tsp Herbes de Provence
- 3 eggs
- 1 cup (8oz, 240ml) milk
Instructions:
The Crust:
Cook rice in stock according to package instructions.
When done, spread out on a plate for 5 minutes to allow to cool a bit.
Lightly oil a 10″ (25 cm) pie or quiche plate.
Whisk 1 egg.
Add 1/4 cup shredded cheese and the cooked rice.
Mix well.
Pat into the quiche plate, working it up the sides as best you can.
Bake in 400F (200C) oven for 8 minutes. Remove.
The Filling:
Heat oil in large skillet, sauté peppers and onions until tender, about 7 minutes.
Whisk eggs and milk together.
To assemble:
Spread the sausage, onions and peppers over the baked crust.
Top with cheese.
Pour the egg mixture over all and bake for 30 – 40 minutes, until center has set.
Remove and let rest 5 minutes. Slice and serve.
Note: I usually put the quiche dish on a baking sheet to make it easier to handle – it gets kind of full…
Yesterday was a weird day, both frustrating and enlightening.
I spent most of the day trying to solve a problem that didn’t exist.
I hate that – such a waste.
I changed my Cooking Light subscription from paper to digital.
Now I can keep entire issues – and not have to dust them.
When I started the digital Cooking Light last December I needed an ‘app’ for my Kindle (I have a Fire 8.9)
They also disabled it, giving me no choice but to enjoy their ‘wondrous experience’.
My December issue promptly disappeared.
The January issue promptly disappeared.
They all disappeared.
Regardless, they had all disappeared.
Yes, they were in my ‘cloud’. I wanted them on my Kindle. The whole point is to have this stack of magazines to read with out having the stack…. and when I don’t have an internet connection.
I called Kindle.
Actually, to give credit where it’s due, they called me. To get help you just ask for it on-line, give your phone number and someone calls. My phone rang instantly.
I explained my problem.
We did all sorts of stuff, none of which worked. We finally resorted to a complete reset, which, unbeknownst to me at the time, wiped it clean.
Of course I still had everything in my cloud. You know, a few hundred books, some apps, some magazines…. Just a few things.
Yay – after two hours I had three magazines!
December and January disappeared.
I screamed.
I politely asked the Kindle people to call me.
I explained my problem, the attempted solutions, and my frustration.
I was put on hold for ten minutes.
I politely and calmly explained that my reason for having them on the Kindle was to store them for future reading (and so I didn’t have to pay the outrageous ‘overseas’ subscription rate).
Then the person said: ‘Oh, you just want to keep them on the Kindle? Hit save.’
Huh?
I just wasted an entire day sorting out a problem I thought I had and all I had to do was ‘hit save’?
The first person I spent 30 minutes with didn’t know this?
Yeah, I really, really felt like hitting…. Save…..
