- Preheat oven to 350 degrees and butter a 2-qt baking dish. In a large skillet, fry the sausage till well browned. Drain and set aside. Meanwhile, in a large heavy saucepan over high heat, bring water and salt to a boil. Whisk in the grits a handful at a time. Reduce heat to a simmer and cook the grits till thick and soft, 30-40 min. Stir, especially as grits thicken, to prevent scorching. Remove the grits from the heat and fold in sausage, cheese, butter and Tabasco. Check seasoning, adding more salt or possibly Tabasco if necessary. Add in Large eggs, stirring briskly. Spoon into prepared dish. Bake 35-40 min or possibly till puffed and lightly set. While grits bake, slice the green onions into sections about 2 inches long. Cut each section into long, thin strips and reserve. Garnish the casserole with green onions.
